This Mother’s Day, create a heartwarming meal for your special mom - celebrating the rich heritage and unconditional love that mothers provide. Our special Cape Malay Curry is not just a dish, but a tribute to the warmth and spice that mothers bring to our lives. Perfect for a cosy celebration at home, this recipe promises to make Mother’s Day unforgettable!
Ingredients:
* 500g chicken or lamb, cut into pieces
* 2 tbsp vegetable oil
* 1 large onion, finely chopped
* 3 cloves of garlic, minced
* 1 tbsp ginger, grated
* 2 green chillies, finely sliced (optional)
* 2 tsp coriander powder
* 2 tsp cumin powder
* 1 tsp turmeric powder
* 1 tsp garam masala
* 1 tsp fennel seeds
* 400g chopped tomatoes
* 300ml chicken or vegetable stock
* Salt and pepper to taste
* Fresh coriander for garnish
Instructions:
1. Heat oil in a large pot over medium heat. Add onions and sauté until golden.
2. Add garlic, ginger, and chillies, cooking until aromatic.
3. Stir in coriander, cumin, turmeric, garam masala, and fennel seeds, cooking for 1 minute until fragrant.
4. Add the meat, browning well on all sides.
5. Pour in tomatoes and stock, season with salt and pepper, and bring to a boil. Reduce heat and simmer for 40 minutes until the meat is tender.
6. Garnish with fresh coriander and serve with rice or naan.
