PAP RECIPES

INGREDIENTS
PUTU PAP / KRUMMEL PAP
2 cups water
pinch of salt
3-4 cups mielie meal

INSTRUCTIONS
Bring water and salt to boil over high heat and add in the mielie meal.
Lower heat to half and place a lid on the pot.
Stir every 3-4 minutes with a long fork to form crumbs in the porridge.
Place the lid on again and let steam.
Stir one or two times more.
Place blobs of butter or margarine on the pap and stir again.
Let it steam for about 10 minutes more stirring often to prevent it from sticking to the bottom of the pot.
Serve with braaivleis and tomato and onion sauce.

STYWE PAP
INGREDIENTS
4 cups water
5ml salt
2 cups mielie meal

INSTRUCTIONS
Bring water and salt to a boil.
Add in the mielie meal.
Stir thoroughly with a spoon.
Lower heat and let simmer for about 30 minutes stirring often.
Add in 125 ml of cold water to the porrige
Let simmer over low heat for 20 minutes.
Serve with braaivleis or tomato and onion sauce.

Red Velvet Loaf
Ingredients
1 & 1/2 cups flour (all purpose or cake)
1 cup white sugar
1/4 cup vegetable oil
1/2 cup buttermilk
2 eggs
1 Tbsp cocoa powder
1 tsp bicarbonate of soda
1 tsp vanilla essence
1 tsp white vinegar
Few drops of red food colouring (I use gel red food colouring)

Instructions
1. In a large bowl add sugar , oil and mix . Add vanilla then mix in one egg at a time .

2. Add buttermilk and vinegar then gently mix.

3 . Sift in flour, cocoa powder, , bicarbonate of soda. Mix just to combine .

4. Add red food colouring then mix gently.

5. Pour the batter (mixture) into a prepared loaf tin .

6. Bake in a preheated oven at 180 Degrees Celsius for 25-30 minutes or until well baked.

FROSTING
1/2 cup cream cheese (room temperature)
1/4 cup whipping or heavy cream (very cold)
1/4 cup sifted icing sugar

Instructions
Add all the three ingredients in a large bowl . Mix using an electric mixture until you get a thick and smooth consistency.

BOEREWORS, CHUTNEY & CHEESE BRAAI BROODJIES

600 g thick boerewors
12 slices of thick cut, farm-style white bread
200 g butter, melted
Mrs Ball’s Chutney
1 small red onion, thinly sliced
250 g gouda, grated
250 g mozzarella, grated
salt and pepper
a handful of chives, chopped to serve

Braai the boerewors over hot coals until the exterior is well caramelised but the wors is still pink in the middle. Let the wors cool then slice it into discs.

Mix the two cheeses together in a bowl. Lay the bread slices out and brush with butter. Spread a layer of chutney on six of the slices of bread and add slices of boerewors. Top the wors with sliced onion and a generous amount of cheese. Close the broodjies and brush the top of each with butter.

Load the broodjies into a sandwich grid then close the grid and place the butter-brushed side down over medium heat coals. Brush the unbuttered side with the remaining melted butter. Braai slowly for a few minutes per side until they are evenly golden all over and the cheese is melted. To serve, slice each broodjie in half and serve with extra chutney for dipping.

MICROWAVE CUSTARD SLICES

1 cup sugar
125 ml custard powder
Mix the sugar and custard powder.
Add 1 liter milk and mix well.
Add 80ml butter and 20 ml vanilla essence, microwave for 10 min on high.
Cream Crackers

Whisk the mixture every 2 minutes with a metal whisk. The custard is perfect when the mixture makes patterns when whisking.
Line your bowl with cream crackers.
Pour the custard mixture over the cream crackers and add another layer of cream crackers on the custard mixture.
Let it cool.
Mix 1 cup icing sugar with 1 tablespoon boiling water and some lemon juice.

Spread the icing mixture over the crackers, let it set and enjoy!

CHOCOLATE COOKIES RECIPE

3 cups cake/plain flour
1 and half tsp baking powder
1 egg
Half cup cocoa powder
1 cup baking margarine/butter(room temp)
1 cup castor sugar
1 tspn vanilla ess
2 tbspn cooking oil

Cream marg, egg, 2 tbspn oil and sugar until smooth,
Sift in dry ingridients, Add in the vanilla ess and form a soft dough,
Scoop dough with a spoon & roll with your hands, forming sizeable equal balls, & place in a baking pan, bake on preheated oven at 160 degrees for ±15mins.

Coconut Chocolate Biscuits

2 cups flour ( plain or cake )
1 cup unsalted butter ( room temperature)
3/4 cup desiccated coconut
1 cup white sugar
3 Tbsp vegetable oil
1/3 cup cocoa powder
2 tsp vanilla essence
1 egg
1/2 tsp baking powder
1/4 tsp salt

Instructions
1. In a large bowl beat together the butter , sugar , egg ,vanilla and vegetable oil .

2 .Then add the dry ingredients (flour, cocoa powder, dedicated coconut,baking powder salt .
Mix until well combined . Use your hands to bring the dough together.

3 .Roll the dough and use a fork to make patterns on the dough . wrap the dough with a cling wrap and let it chill in the refrigerator for at least 40 minutes.

4 .On a slightly floured surface roll the dough into your desired thickness.

5 .Use a round cookie cutter to cut out the dough. Place in a prepared baking tray.

6. Bake in a preheated oven for 10 to 12 minutes at 180 Degrees Celsius.
Do not over bake them !!!

7. After cooling, melt some chocolate and sandwich the biscuits together.

* If you are using salted butter don’t add salt .

Ginger Snaps
(Monowara Mohamed Bhamjee/District Six Cape Town Recipes/Kaalvoet/Barefoot Chef)

500g self raising flour
250g butter/marg.
2 cups sugar
3 Tblsp fine ginger
1 Tblsp fine cinnamon
1 Tbslp mixed spice
1 tsp bicarbonate of soda
2 Tblsp oil
3-4 Tblsp golden syrup
2 eggs
Method
Rub butter into flour
Add sugar, bicarb and spices and mix through.
Add oil, golden syrup and eggs and mix to a nice stiff dough.
Ps. Don't add anything to wet the dough.. If you continue to mix it will form a dough..
Break small pieces of dough off and roll into a ball
Place on the prepared baking trays leaving space in between for spreading and bake in a moderate oven for 12-15 minutes..
Ps I leave it in the oven(switched off for a further 10 minutes to make it extra crispy)
This is my old trusted friend that never ever let me down.
Been making it for over 30 years so yep.. we've had a love affair that stood the test of time.

SAVOURY IMPOSSIBLE PIE.

Quick and easy for lunch or supper.
This pie makes it' own crust!
Serve up with veggies on the side or with a large tossed salad!

Ingredients
2 cup baby spinach
1/2 cup plain flour
1 cup grated tasty cheese
1 cup diced ham
1/2 cup crumbled feta
2 cup milk
4 eggs, beaten lightly
60 gram butter, melted
1/4 cup grated Parmesan

Method
1 Preheat oven to 180°C. Lightly grease a 24cm pie dish.

2 Blanch spinach by placing in a bowl and covering with boiling water. Soak for 1 minute, drain, and refresh under cold water to stop cooking process. Drain again.

3 Sift flour into a mixing bowl. Stir in cheese, ham and feta.
4 In a jug, blend together milk, eggs and butter. Whisk into flour mixture with spinach.

5 Pour mixture into prepared pie dish. Sprinkle evenly with parmesan.

6 Bake for 45-50 minutes or until golden and set. Serve warm or cold with salad.

Jam Tertjies (Jam tarts)

1 kg puff pastry
Jam
1 egg
Icing sugar

Buy some good home made puff pastry. I bought mine at Portland Butcher in Mitchells Plain..
1kg pastry, rolled out into a square on a floured surface
Cut out equal sized squares and place on baking tray with baking paper on it..if you don't have baking paper then lightly butter and flour your baking tray.
In the centre of the cut out pastry dough, dollop 1 teaspoon of jam..
Egg wash the sides of the pastry.

Take each end of the square and fold it over to the middle where the jam is placed. The egg wash will be the glue that hold it together..
There will be open gaps in between. That's fine
Place in freezer for 10 min..
The colder your pastry when placed in hot oven. The better your pastry will puff up.

While tarts are in freezer, pre heat oven to 200 degrees.
Take tarts out of the freezer and place in hot oven..
Bake until pastry have puffed up and golden.
Depending on your oven, how long this will take.. Mine usually takes about 15 min. But keep your eye on it every now and then..

Once baked, remove from oven.. Place on a tray and let it cool off.
When you ready to serve, dust it with a little icing sugar..
Yum yum good.

EASY ONION RINGS

INGREDIENTS
750 ml oil for frying
1 cup dry pancake mix
1 large onion sliced into rings
1 teaspoon mixed herbs

INSTRUCTIONS
Heat the oil in a large pot over medium to high heat.
Mix the pancake mix to package instructions and add in the mixed herbs.
Dip onion rings one by one into the pancake mixture and then into the hot oil.
Fry until crispy and browned.
Drain on paper towels and serve with dip of your choice.
