Fruity Friday...
This was our first ever fruit station set up for an event we catered for back in 2017.
Looking back,when we embarked on this food catering business,had a vivid vision and direction of how we would execute our catering events in terms of display,presentation and flavors in general and having fruits as being part and parcel of all our menus was an integral part of the vision.

Fruits add vital nutritional value to us as humans in general and so adding them to be a part of all our food catering menus was a must,not only that,but we wanted to grant them enough respect by ensuring that they specifically had a table display of their own and make them look pretty in every way possible.Our clients will agree with us that whenever it is we are planning and liasing for their events(food department wise),we are always like "our fruits station table is a must,it ought to be present at every event"😀.
Fruit stations are what we mostly became known for and will forever be a part and parcel of our business brand and journey.

With that being said,starting this year we have decided to have a friday segment on our *INSTAGRAM* social media business page dubbed as ,where we shall be posting all of our fruits station works of past events as well as events to come,just to appreciate how far we have come.

LUSALA
A Zambian local indigenous root vegetable,very nutritious, full of dietary fiber and nutrients,it is simply a yummy vegetable.
Can be prepped in a very easy way and can either be enjoyed as a snack or served with Nshima or a side dish of your choice.

INGREDIENTS:- 2 cups of lusala,1 medium sized chopped ripe tomato,1 small sized chopped onion, 3 tablespoons of vegetable cooking oil,1/4 teaspoon of diced green pepper(optional), salt to taste.
METHOD:- Wash the lusala until clean,add it to boiling salted water,and cook on medium heat for about 5-10 minutes or until tender but still slightly firm to the bite,remove from the boiling water then drain using a colander untill all excess water is strained off the vegetable...
Heat oil in pot,add the strained and cooked lusala,gently fry for 5-8 minutes,allow for slight bits of charring to occur on some parts of the lusala during the cooking process,this tends to add more flavour to it..maximise on the flavours by scraping off all the little bits underneath the pot as you continuosly fry it...add the chopped onions,cook till succulent,add the chopped tomatoes,cook till done,season with some salt,adjust the seasoning accordingly,then lastly,add the diced green peppers for that last bit of added crunch to the dish...serve hot as a snack or with Nshima.
