Ingredients

Mother’s pride breakfast
3 big bream
2 tomatoes grated
1 teaspoon curry powder
Cooking oil
2 cloves Garlic
2 onion
Pumpkin leaves
2 cups pounded groundnuts
1 teaspoon soda

Method Nshima

Put Mothers pride maize meal in a pot, add cold water and mix. To the mixture add hot water and simmer for 15 minutes. Start to add Mothers pride maize meal to the mixture, mixing carefully with a cooking stick. Once you get a soft to stiff mixture stop adding mealie meal. Cover for five minutes and serve.

Method visashi

Bring water to a boil. Add salt and soda. Add pumpkin leaves. Let it boil until it’s soft. Drain some water but not all of it.

Add onion, tomato, groundnut sauce paste(pounded groundnuts mixed with water). Allow the mixture to boil before turning.

Method fish

Clean fish. Apply salt and garlic. Fry until golden brown and crunchy. Set aside. Remove excess cooking oil. On the same pan add onion and tomato. Add salt and curry powder. Once combined pour over the fried fish and simmer for 5 to 10 minutes uncovered(this is to maintain the crunchiness of the fish)

A vanilla loaf easy to make,I’ve previously shared this recipe but used sour milk this time around.

3 cups flour
3 eggs
1 cup sour milk
3 teaspoons baking powder
1/4 tsp salt
1 cup butter
2 cups sugar
1 tablespoon vanilla essence

Method

Cream sugar, butter and essence.Once fluffy add eggs. Mix until well combined. Add flour(sieved together with salt and baking powder), alternate with sour milk. Mix until smooth and well combined.

Bake at 160 degrees for 30 minutes or until tooth pick inserted comes out clean.

Ouma’s Quick Tomato Sauce

There are all sorts of store-bought brands of tomato sauces that work well enough on your pasta dishes and can be added to your meal but by making our special sauce you are assured flavour to the max and it keeps well.

WHAT YOU NEED:

1 onion finely chopped
1 small carrot finely chopped
1 small celery stalk finely chopped
100 ml of vegetable stock
3 cloves of garlic minced
Fresh basil finely chopped
8 tomatoes skinned and crushed
2 tsp tomato puree

METHOD

1.In low heat and in a lightly oiled pan cook your finely chopped vegetables, at a tbs of vegetable at a time until all the vegetables are cooked through
2.Add your garlic and 1 tbs of Ouma’s Flavourtown Chilli, stirring in and cooking for 30 seconds to a minute before adding your crushed tomato, tomato puree, fresh basil and the rest of your vegetable stock.
3.Season with salt, pepper and a tsp of Ouma’s Flavourtown chilli sauce at this point and simmer on low heat for another 30 minutes.
4.Once the mixture is a thick consistency take off the heat and cool completely before use or refrigeration.

This flavour-packed sauce is an amazing base for your sauces, pizzas and other dishes.

Macaroni and Cheese Recipe with Bacon
Some recipes take more time but they are so worth it

What you need:

500g of elbow macaroni
4 cups of milk
4 cloves of garlic
1 tbs of Ouma’s Flavourtown Chilli
2 sprigs of thyme
4 tbs of unsalted butter
3tbs of all-purpose flour
5 or 6 cups of cheddar cheese
5 pieces of bacon, roughly chopped
1/4 cup of parsley, finely chopped
I large onion
Salt and pepper to taste

Method
1 Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
2 Preheat the oven to 200 degrees C.
3 In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt, pepper and a tbs of Ouma’s Flavourtown Chilly.
4.In another pot, cook the bacon with the onion until the fat renders and bacon is crispy.
5. Add the cooked macaroni and the parsley and the bacon, folding that all in to coat the macaroni with the cheese mixture. Scrape into a baking dish and sprinkle with the remaining cups of cheese. Bake for 30 minutes, or until hot and bubbly.
6.Garnish with extra bacon and onion or parsley and don’t forget to add an extra spoon of Ouma’s Flavourtown Chilli for an extra kick.

Ouma's Pizza Dough Recipe
While you can make do with store-bought dough, with Ouma’s easy recipe why not make your own

400g of flour
4g of yeast
2tsp of salt
2 tbs of oil
1 cup of water

Method
1.In a large bowl, combine your flour, yeast, oil, salt and water until thoroughly combined and not sticking to the bowl or your fingers
2.Transfer to a lightly greased bowl and cover with plastic wrap. Leave the dough to rest up to 8 hours or overnight before use.

SWEET VERMICILLE/ SEMIYA RECIPE

A tried and tested dessert recipe that leaves you feeling nostalgic and wanting more

What You Need:

1 1/2 cup of vermicelli
3 tbs of Ghee (clarified butter)
4 1/2 cups of milk
1 tbs of elachi powder (cardamom powder)
3 tbs of sugar or to taste
1/4 cup of raisins
1/4 cup of nuts (cashew, almonds or macadamia nuts)
Method
1.Heat the Ghee and add the thin vermicelli. Evenly toast until golden brown before you transfer to a bowl
2.In the same pan lightly toast the nuts of your choice before you transfer them to a bowl.
3.In the same pan bring milk to a boil. When the milk comes to a boil reduce the heat and add your toasted vermicelli and stir for 5 to 7 minutes until a thick consistency, be careful not to overcook
4.Add sugar, elachi powder and raisins. Taste for sugar now, add as required and cook until sugar is dissolved
5.Add a handful of nuts and cook for 2 more minutes before taking off the heat
6.you can serve while warm and garnish with nuts or you can chill for 1 or 2 hours before you serve over cooled milk and garnish with the rest of your nuts

Hummus Without Tahini Recipe

A perfect side dish to your naan bread would be a creamy hummus and you can make it without a Tahini, besides what a better way to go for an easy weekday side

What you need:
A can of chickpeas
2 cloves Garlic
1 and 1/2 tbs of Lemon juice
3 tbs of Olive/ canola oil
2 tbs of Hot water
1/2 tbs of Salt
1 tbs of Cumin
A flavour-packed option is to add roasted bell peppers

Method
1 Put all ingredients for hummus in a food processor. Process until smooth. Add in extra water if it’s too thick. Taste and add extra lemon juice or salt if needed.
2 Transfer into a bowl, make a swirl and drizzle pumpkin seed oil over it. Use garnish of choice but my favourite are sesame seeds and a tsp of Ouma’s Food Hut Flavourtown Chilli Paste
3 Serve with crackers, vegetables, chips or pita or naan

Hi everyone, for those who have been buying our curry paste you have been asking for an awesome recipe for a curry. Perhaps you have taken a trip to Durban and you have experienced the yummy taste of a mutton bunny chow or had a tasty flavour of a chicken curry with Rice and Roti and you would like to recreate that flavour. Well now you can, Ouma has created a curry paste with all the spices and ingredients to make the job easy for you and make a just like a Durban aunty would. Below is a recipe that can be used for any of your Curry's. Let's get cooking


Marinade meat of choice overnight in yoghurt or sour milk with a tsp of Ouma's Food Curry paste (optional)
• 2 1/2 tbs Ouma's food Hut curry paste
• 1 clove of garlic (optional as the paste contains garlic)
• 500g mutton, chicken or beef (cut into bite size pieces)
• 100ml oil
• 1 large onion chopped
• 1 tbsp tomato paste/ 3 large blended tomatoes
• 1 sprig curry leave
• 1tsp salt
• 6 medium sized soft cooking potatoes cut into 4 pieces
• 3 sprigs fresh coriander (chopped dhania)
• 1 grated medium tomato (If tomato paste was used)
• Use water if desired

Instructions – Durban Curry Recipe
1. Use a large, flat pot so that there is enough space for the curry to cook.
2. Heat oil and then add onion and let them soften and brown (cook on low to medium heat)
2. Once onions are softened and brown (not burnt ) add your Ouma's food Hut Curry Paste (do not burn the spices, stir with onion for a few seconds)
3. Add tomato and tomato paste (when almost cooked stir in meat and allow to sauté)
4. Turn down heat and cover saucepan
5. Cook until meat begins to fry up
6. Add the curry leaves and salt
7. Add the water (if necessary) and add soft cooking potatoes when the meat is a bit soft
8. Bring to a boil, then turn down to moderate heat
9. Cook until meat is tender & potatoes are soft
10. Simmer until ready to serve
11. Garnish with dhania

Their you go, making your own Durban Curry is now that simple with Ouma's Food Hut Curry Paste. You can serve your curry along with any one of Ouma's Chilli sauce's, for a truly Durban experience you can serve with the Flavour town Chilli sauce
