Amarula malva pudding

Amarula malva pudding

Ingredients
250ml castor sugar
2eggs
1TBsp smooth apricot jam
185g plain flour
2tsp baking powder
Pinch of salt
2TBsp Butter
1tsp vinegar
1/2cup milk

For the sauce
1/2cup butter
1/2cup white sugar
1/2cup Amarula

Method
•.Preheat oven to 180degrees
•Beat castor sugar and eggs until fluffy
•Beat in the apricot jam
•sift the flour,baking powder and salt together 3timesMelt the butter with milk and vinegar at a low heat
•Fold the flour mixture and milk mixture alternative into the egg mixture and pour batter into a baking pan and bake for 45mins

For the sauce
Place the cream,butter and sugar and Amarula into a sauce pan stir over moderate heat until the butter melts and sugar dissolve (do not allow mixture to boil)
••Remove the pudding from the oven pierce it and pour the hot sauce over it immediately and serve
