Sitting at the Mawson Lakes Hotel for a family birthday celebration dinner and I was excited to see so many gluten free options, including chicken schnitzel. Went to order and the chef sent a message back…not today. Apparently he’s using the dedicated gluten free fryer for everything else. So I’m watching everyone else eat, tempted to Uber Eats a chicken schnitty from The Salisbury Hotel and have it delivered to our table. 😂😂

Work pressure has settled down for next week, I have a few catering gigs to fill but I’ll still have time for meals. Public service announcement. The Salisbury Hotel dedicated gluten free fryers are up and running from tomorrow! Starting with crispy beer battered fish, salt and pepper calamari, chicken schnitzel , kid’s nuggets and of course, a good side of fries! More to come and a good percentage of the menu is naturally gluten free. As is 90 percent of the salad and veg bar, cross contamination procedures in place. Who’s coming for dinner? 😊

Made a tasty laksa for dinner tonight, so much depth of flavour! Garlic, chilli, ginger, lemongrass, chicken stock, soy…my own chilli sauce with coconut cream/milk mix…that’s just the broth! Add chicken, bok choy, pak choy, bean sprouts, vermicelli, thick rice noodles, fried shallots…it’s a flavour bomb! Do we need this on the next menu? 🙄😍😂

Amazing crunchy crispy pork belly…slow cooked and super juicy and tender. If you want to eat out, it’s on the specials menu at the Salisbury Hotel…100 percent GF. If you want it at home, it will be available on this week’s menu. Looks like a win win from here! 😊

I know I’ve been quiet the last couple of weeks but I have a good reason! Been super busy with my day/night job at the Salisbury Hotel. We are working on making this venue a coeliac safe pub, the first in the north…. Our end goal is coeliac Australia accreditation. I’ve also had events to cater which take up my free time, but next week’s roster leaves time for you! Hit me up with your meal requests, so far my plans include salt and pepper chicken (Chinese style), Thai chicken satay’s, beef satay’s and nasi goreng. If you have any special requests, hit me up! 😊

Today’s efforts also included a Thai green chicken curry with green beans and rice, marinading overnight are our favourite KFC style chicken and honey sesame prawns. I’ve just had an amazing, relaxing weekend on the York peninsula, trying to catch fish and squid (caught seaweed…does that count?)😂 And I made a new seal friend!

Last week I hit exhaustion mode. Between my day/night job and catering commitments I hit burn out. I know a lot of my regulars had cravings and I really wanted to cater to them but I chose to do me this week. I’m sorry for that. But doing me for one week means I’ll have the energy and passion to do you next week. I’ll have a menu up Wednesday for collection on Sunday. I have a list of sweet cravings to cater to (sorry you have to wait a week to fulfill them!) but welcome any requests for meals now and Wednesday. I’ll do my best to accommodate them. PS the new GFJatz are the bomb!!! 🥰

Today went like this…working in the pub kitchen till 2.30, home at 3…. This week’s meals and carrot cake orders all collected by 6. Straight to the The Port Admiral Hotel to satisfy my 2 week craving for a juicy beef schnitzel with prawns and creamy garlic sauce, had to do takeaway Baci chocolate cake too! Thanks Gage, Bec, Scotty, Shay and Eden for the best dinner experience. Nobody knows a true schnitzel craving like a coeliac! 😂😂 I’m fuelled for a double shift tomorrow 😊
