Lemon Meringue Pie Cheesecake
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
3 large eggs
1/2 cup sour cream
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
For the Meringue Topping:
4 large egg whites, at room temperature
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Instructions:
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the bottom of the pan with aluminum foil to prevent any leaks.
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan.
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs, one at a time, mixing well after each addition.
Stir in the sour cream, fresh lemon juice, lemon zest, and vanilla extract until fully combined.
Pour the cheesecake filling over the prepared crust in the springform pan.
Place the springform pan in a larger baking pan and fill the larger pan with hot water to create a water bath for the cheesecake.
Bake the cheesecake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.
When ready to serve, prepare the meringue topping. In a clean mixing bowl, beat the egg whites and cream of tartar on high speed until soft peaks form.
Gradually add the granulated sugar and vanilla extract, beating until stiff peaks form and the meringue is glossy.
Spread the meringue evenly over the chilled cheesecake, making sure to seal the edges.
Preheat your oven's broiler. Place the cheesecake under the broiler for 1-2 minutes, or until the meringue is lightly browned.
Remove the cheesecake from the oven and let it cool for a few minutes before slicing and serving.

Sharing this helpful map showing us local MRSC perps who to call about which dodgy, ditchy, pot holey road… we have more than a few, as I well know from being out and about picking fruit & dropping off deliveries 🚚 - this is purely a community service announcement 📣 🗺️ 🕳️ 🚗
To help clarify road management and ownership, Council has produced a simplified map illustrating who to call if a road issue needs attention 🛣️
The green roads are VicRoads responsibility and should be reported via vicroads.vic.gov.au/traffic-and-road-use/report-a-road-issue or by calling 13 11 70.
All other public roads (outside of state parks) are Council’s responsibility and can be reported via mrsc.vic.gov.au/report-it, by emailing [email protected] or by calling 5422 0333.
Council passes on relevant reported issues to VicRoads, however reporting road issues to the correct contact point in the first instance ensures that the responsible area has knowledge of the issue directly, can more promptly respond and if multiple people are reporting, there is transparency of the broader impacts.

Today’s bake is all about Sourdough Ears & Art - as the saying goes, you eat with your eyes first & if you’re in my house, your nose before your eyes… I love my Sourdough bread to look, smell & taste, not good but bloody sensational, & I have no qualms in proudly saying it does all 3, because it is Homemade, Handmade, Artisan bread… no mixers, no dough hooks, no machines are involved until the oven to bake it. I had a call yesterday from a lovely local asking me to teach her, the short answer is not yet, but once I am stronger (currently post spinal op) I will revisit offering sourdough classes. Thanks to a lovely local, I’ve made a beautiful batch of green tomato relish, this is simply the best burger relish, it’s thick enough to coat your bun & tangy enough to stand up to all those competing burger 🍔 flavours. We also use it on other meats & the odd sausage roll but unlike it’s red tomato 🍅 option, there’s a crispness to the green that just lifts the palette. It’s been missing from my store for a while & it won’t last long at only 30 bottles, but I hope you enjoy it as much as we do. I’ll probably pay for this physically tomorrow, but I’m smashing out 3 small batch jams today to fill orders & get stock numbers back up in time for orders due & the Mother’s Day Lancefield Romsey Lions Club market on May 14th. As always, I make jam via a method known as maceration where the fruit is covered in sugar, overnight, to release its natural fruit juices, meaning there’s no added water & because I honour my promise to you of making only small batches, I don’t need to add citric acid or gelatin or anything that makes this jam less than exactly what I advertise, which is great, local fruit, sugar & freshly squeezed lemon 🍋 juice in a jar. You can’t beat it, it’s real, it tastes better & it’s better for you.
