Well I turned out great, never cooked a beef tongue let alone smoke one but with a few different techniques. We have some nice beef tongue tacos for dinner and home made Mexican salsa with fresh veges from the garden. Oh and nice juicy mud crab sangers for lunch, a crab was loaded.

Sunday session this week will see us do some different low and slow with Beef Tongue on the menu. This will be done Cajun Style with a Mexicana salsa on white corn tortillas. Photos will be uploaded this Sunday.

American double jack cheese burger with 70/30 chuck beef and black Onyx brisket fat trimmings, with Lettuce, Kewpie mayo, house made pickles, red onion, double beef patties, cheese, American mustard, and Ketchup, on a toasted sesame seed bun.

Tonight's dinner is a Honey Sriracha roasted chicken using Lane's BBQs new seasoning, with a rich laksa sauce and a medley of colourful vegetables. To eliminate waste I used the chicken carcass in making the sauce and am now making a Thai style broth. No word of a lie even when I feel run down on energy I still managed to knock this up in about 40mins of prep with and the oven did the rest. Bonappetite.

Good morning all what a great day to do some yummy cooking. A 10kg Black Onyx brisket, and some truffle mustard and ancho espresso pork shoulder for pulled pork. Bring on a great day of flavours. The people who we are doing this for are going to be very full by the end I think.

We had a great day at home with friends using our Argentinean Parilla grill to cook an array of yummy food. Supporting local with Kin Kin grass fed beef rib eye on the bone steaks, and fresh produce from our thriving vegetable garden. This is one of our amazing ways we love to cook for any function we cater for. It's so versatile and the flavours speak for themselves.
