Nihari has a flavourful depth so deliberate that one can almost taste the unhurried and intentional consideration gone into putting the ingredients together. My version of Nihari is inspired by the famous food street of Karachi. This is a thick rich Boneless curry, laden with tender chunks of beef and shank meat, slow cooked to perfection in the bone stock of trotters (paya). It is one of my specialities and Alhumdulillah, whenever I’ve served it to my friends and family they have relished it thoroughly.
