Looking for something to do this weekend? We have you covered at Evergreen Park. Grande Sunset Theatre is hosting Nitehawk Year Round Adventure Park's Comedy Night on Saturday; there is a fundraiser movie, Playing With Fire, for the local EMS and firefighters at the Grande on Sunday; Blachford Field of Nightmares is ready to scare you 8:30 p.m. to midnight Thursday to Sunday; there is no charge to use the Evergreen Park Community Disc Golf Course at the southside of the Park; Evergreen Ridge, on the northeast corner of the Park, has all sorts of hiking trails; and Wild Horse Casino and Lounge is open 10 a.m. to 1 a.m. daily. Organization:
Reporting directly to the First Cook and CDP’s, assisting the food and beverage team to provide outstanding customer service, interacting directly with the Parks’ guests during banquets and events.
Job Duties:
• Supervising an on line team of 2-3 cooks in the Evergreen restaurant or concession kitchens
• Leading secondary teams during large banquets and off-site catering
• Working rotating shifts throughout Evergreen Parks’ culinary operations
• Following instructions for food production of banquets, business functions and concessions
• Production of prep and line items to high standards
• Assist in the orientation and continuing training of new and junior team members
• Completion of shift duty checklists

Job Specifications:
• Prefer 1 of year culinary experience in a busy restaurant. Banquet experience desirable
• Working weekends and evenings, scheduled as changing business requires, flexible schedule
• Standing for extended periods, lifting 50+ lbs, hot environments, working outdoors, customer interaction
• Food Safe, WHMIS and First Aid certifications preferred

Product & Performance Standards:
• Ensure excellent customer service working within the F&B team

If you're craving some unique chips, fries or margaritas, here is an easy way to put a unique spin on anything with salt! The recipe listed has been used with a waffle (gaufrette) potato chip and even used as a garnish on plates at Evergreen park. You can follow the guideline of this recipe and make any kind of flavoured salt, we also use a lime salt in our restaurant. The same can be done with sugars, they will have a clumpier look, but will be a unique garnish. tip....keep the temperature low and make sure you turn the corners in when you mix the salt, this will avoid excessive discolouration. Another tip....when you are trying to develop new flavours, you can just taste the salt before baking, the flavours will not change much, as herbs, spices and produce flavours are carried in their oil, which remain in the salt or sugar after dehydration. That's why dry herbs and spices are about 10X as potent as their fresh state by volume!

Did not get the cooking in this video, but the brisket was smoked and slow cooked for about 12 hours with an 8 hour hold...to relax... The pork belly got a 6 hour dry roast, with a final crisp up...slow and low...

Almost in time for BBQ season..... Ever wonder what the secret is to cooking chicken, turkey or pork well done, yet having the finished roast juicy? If you don't keep scrolling.. But if you Do! As usual, the secret is not found in the health food aisle... Many commercial kitchens and retail sellers brine any white meat anywhere from 4 hours to 24 hours depending on the size of the meat. Brining involves making a water, sugar and salt solution that can be flavored with any variety of herbs, spices or even liquor. These flavourings are usually close parallels to what you would season the meat with when you cook it. Brining will remove leftover enzymes (what everyone calls blood) left in the meat from the aging process, and give your meat extra moisture and seasoning. We've included a recipe for a Pork belly brine, that only requires 4-6 hours, and a white meat brine that is geared for turkey but will work well on larger cuts of poultry or pork, and is an overnight brine. Make sure to rinse all the items that you brined before cooking as the sugar will make it brown or burn quickly! tip... smaller pieces of meat require less time brining! Chicken breast would only need 4-6 hours in this white meat brine. tip brined meat cooks faster! Reduce cook times by 10-25%. ANOTHER tip, if you're in a rush you can increase the level of sugar or salt and brine the meat for a shorter period!

El cerdo macho! Try a Mexican inspired dish we have served at Evergreen Park. Pork Carnitas are prepared in the age old tradition of braising in....fat... While it's not health food, like most things that are delicious, the results are great! Fat is flavour after all! We served this dish as part of a sandwich, but it would lend itself to salads, pastas or casseroles. Carnitas re-heat great as the fat stops the meat from drying out. tip, leaving the meat in the fat will help preserve it a little longer as it helps seal out oxygen and bacteria. The French version of this is confit, but both cultures prepared food like this to help preservation before refrigeration, and the magic continues today. Another tip, if this sounds too fatty for you, you can remove it from the fat and continue roasting or saute it to help more of the fat to drain off. They say the key is moderation though, whatever that is...

Only two women know how to prepare this entirely hand-made dough. The Barilla corporation tried to replicate it with a machine and......failed. Jamie Oliver...failed. Here's a quick recipe we've used a few times at , pickled grapes, nice summer recipe. Red grapes give a colour contrast on most items they're paired with, but this recipe can be used with any type of grape or firmer fleshed fruit. Refrigerating overnight is best, but we have prepared these in just enough time to let them chill. Evergreen Culinary cooking tip....let the pickling liquid (brine) cool off for a few minutes before adding the grapes to retain the best texture!! Here's a link detailing how to make brown butter, tip, remove the pan from heat just before the butter is the colour you want, the heat from the pan will continue browning the butter for a couple minutes after (carryover cooking).
