Best Mixologist: The Spiced Flower
A perfectly balanced combination of sweet, spicy, and floralness this cocktail focuses on the terpenes within the ingredients of which it is composed, primarily Linalool and Alpha-Pinene. The beverage starts with a strawberry candied rim (strawberry sugar), lavender & pine-infused strawberry simple syrup, lime juice, and is finished with Fever-Tree ginger beer & lavender flower. Both strawberries and ginger contain linalool and the pine will give an added freshness to the overall concept.
Best Chef: Bourbon Marinated Salmon
Sweet, smoky, crispy, and delicious. A hardy, texture-filled combination of southern flavours focusing on the common terpenes found in salmon i.e. Alpha-Pinene & Limonene. This dish takes an untraditional approach on breadcrumbs substituted by a roasted pecan and Canadian bacon crumble, blitzed to the same consistency as panko, to increase the smokiness and textural appeal of the overall dish whilst making it gluten-free. Paired with bright corn grits add a hearty base, candied heirloom carrots for a variety of colours, and garnished with micro parsley. The sauce accompanying this dish is a thinned rendition of the bourbon marinade itself. The marinade and sauce are a combination of pine-infused maple syrup, navel orange, molasses, worcestershire, and tamari soy sauce. The navel orange will complement the limonene and the pine-infused maple syrup will complement the Alpha-Pinene making this a well-balanced terpene-rich dish.
