Back to business.

Yesterday Fox Outside Catering were asked to do one of our more bespoke events.

It was breakfast for 20 at 06:30am, "THATS NOT THAT STRANGE I HEAR YOU SAY", well it usually wouldn't be but this particular breakfast was to be served at the top of Gummers How and to be ready for sunrise.

So Dave, Mike, Edgar and Elizabette set off at the crack of dawn, wielding nothing more than back packs, torches and a will to succeed. Although looking at the pictures I think Michael is more worried about his hair than the view 😂😂

Sorry there has not been much posted lately, one of our Fox Outside Catering mascots (Heidi) as been keeping us very busy.

At first I've been very worried to share posts and this is why I've left it for some time, lately there has been a massive spirt of dog theft and we have had to install extra security to allow for this. please everyone be vigilant and try to walk with other dog owners or in busy areas, also always lock your doors and don't answer to suspicious people knocking late at night.

Fox Outside Catering are very proud to say we have raised £340 for the MND association. We have been working with the MNDA for some time now and either through birthdays, auctions or coffee mornings.

"RECIPE OF THE WEEK" is back and we have some crackers for you this time.

Chocolate Sponge Cake - with chocolate custard and freeze dried raspberries.

Equipment:

1 x Large mixing bowl.
1 x Electric whisk (you can use a wooden spoon for this).
1 x Medium mixing bowl.
1 x Sieve.
1 x Hand whisk
1 x Large & deep baking tray.
1 x Spatular.

Ingredients:

- 340g x softened unsalted butter + extra for greasing your tray.
- 340g x caster sugar.
- 220g x self raising flour.
- 120g x cocoa powder (good quality) + extra for dusting the tray.
- 10 x large eggs.
- 40ml x semi skimmed milk.
- 1ltr x Custard .
- 500ml x Chocolate sauce .
- 10g x Freeze dried Raspberries (fresh ones will do if you can't get these) .

Method:

1. firstly preheat your oven to 170oc. then grease your tray with 🍰🍰🍰🍰😋😋softened butter, once you have greased your tray coat it in cocoa powder and bang off any excess. Put this aside for the time being.

2. Add the butter and sugar to the large mixing bowl, Using your electric whisk or wooden spoon start to cream the butter and sugar together until it becomes light in colour and smooth.

3. In the separate medium bowl whisk your eggs together until they are light and airy. Now SLOWLY add your eggs to the creamed butter, a little at a time whilst continuing to beat the mixture. (NOTE: if the mix starts to split at any point you can resolve this by adding a small amount of the flour). once the eggs are combined then add the semi skimmed milk and whisk in.

4. Once your egg, milk, sugar and butter mix is completely combined, you now need to sieve the flour and cocoa powder onto this, then take your spatular and lightly fold the flour and cocoa into the wet mix. Do this until the mix has completely combined and is now a milk chocolate colour.

5. Pour the mix into your baking tray and scrape out any excess with the spatular, using the back of the spatular level out the cake mix in the tray. Place the cake in the middle of the oven and bake for 35-40 minutes.
(NOTE: you can check its done by inserting a sharp knife - if it comes out clean the cake is ready)

6. Meanwhile mix together your custard and chocolate sauce, making a rich chocolate custard. Place this on or near the oven so it is at room temperature when ready to serve.

7. Once the cake is cooked, remove from the oven and leave to cool for 10 minutes, then turn the cake out onto a wire rack or greaseproof paper, leave this for a further 20 minutes and then cut into portions.

To serve:

place one square of the "still warm" chocolate cake into a bowl or deep plate, pour over 150ml of the chocolate custard mix and sprinkle with crushed freeze dried raspberries.

Another Week Ends and “Fox Outside Catering” have been busy as usual. Helping the local community and supporting where we can.

We have been making hundreds of meals for the less fortunate and disadvantaged around Barrow and the South Lakes. It was curry week this week with bread and butter pudding for dessert.

The Fox Outside Catering team, taking a well deserved morning off at “Tarn Hows”. This place is beautiful on a wintery morning, especially with the lake frozen.

This stunning place is only a 10 minute drive from “The Sun Inn, Hawkshead”. Perfect for a nights stay, quick brisk walk in the morning and then back for a delicious hearty breakfast.

A brief look at whats been happening within "Fox Outside Catering" & "The Sun Inn, Hawkshead" in 2020 and into 2021 !!!

Although the hospitality industry has had and is still having a torrid time through this pandemic, here at Fox Outside Catering & The Sun Inn we have still managed to grow and hopefully achieved to make our footprint on the industry a brighter one. I truly believe in the hospitality industry and we are committed to the trade.

Firstly we have welcomed David Bewick (operations manager), Katherine Pugh (Finance and HR), Mike Bown (General Manager), Edgars Kaposts (Reception, Sales and Marketing), Elizabete Vetra (Head of House Keeping) and Kristaps Ziganovs (Head Barman and Assistant) to our team. Thank you to these individuals and the rest of the team for working hard in these awkward times and I think it is a credit to Fox Outside Catering & The Sun Inn, that we have found a way to employ people during the pandemic and keep industry alive. All of the above people were either on furlough or redundant of work and are now happy and earning money.

Secondly, as you are all aware we started 2020 with our FFL(forgotten front liners) charity and also helping the Ulverston Self Isolation Group, distributing meals and giving support to our community in the way of free meals. During this time Fox Outside Catering provided over 900 hours of FREE time and over 7,000 meals. Although all of the individuals that we provided for were and still are providing essential services through unprecedented times, I was personally taken back and extremely grateful for the work seen in all of our local care homes and other community care/support groups, such as the "Woman's Community Matters" or WCM.

Thirdly, myself and Fox Outside Catering were awarded the "High Sheriff of Cumbria Special Recognition Award" for our outstanding contribution to the community within Cumbria. This was given to us for our FFL charity and how much this boosted spirits and allowed the front liners within our community know they were not forgotten.

Fourthly, working with the team mentioned above and others, Fox Outside Catering have completely renovated and rebranded "The Sun Inn, Hawkshead". We started this project in June and within 7 months, we have completely turned this 17th century inn around, renovating and renewing the complete building including, 8 bedrooms and all areas within. Knowing how much trouble the business was in already and also how the industry was shaping/misshaping up, this was not a small task but nether-the-less one I personally wanted to achieve. I can now safely say that "The Sun Inn, Hawkshead" will be around for years to come and also will hopefully be a benchmark or give hope for other struggling businesses within Cumbria. It has taken blood, sweat and tears but please be rest assured it has been more than worth the effort.

LAST BUT NOT LEAST, Fox Outside Catering did not stop with our FFL. Unbeknown to many we have been continuing our meals through the whole of 2020 and into 2021. So taken back by the work that the "Women's Community Matters" are doing within the Furness area, Fox Outside Catering continued to work with them and have to-date produced over 3,000 meals for them and given over 800 hours of our time for free doing this. They support the less fortunate and disadvantaged individuals around Barrow and local area. The WCM were a much needed charity before Covid19 struck our country, but there support and the staff that work here are needed more than ever right now, they deal with abuse, poverty, housing and much more, working alongside other charities and local government to make a difference. They only use local businesses to achieve this and this is a credit to their commitment. I would like to say thank you from everyone who lives in and around the South Lakes.

REFLECTION:

1. Provided secure jobs and comfortable work places for over 10 individuals

2. Provided over 10,000 meals and 1,700 hours of time for free within the South Lakes and for the community within.

3. Fox Outside Catering were awarded the "High Sheriff of Cumbria Special Recognition Award" for our outstanding contribution to the community within Cumbria.

4. Renovating/rebuilding struggling businesses and showing people within the hospitality industry, that there is still hope and with hard work we can get through this.

5. Continuing to provide a free service to the most vulnerable and disadvantaged with our community.

I would like to say a big thank you to everyone involved and lets try to keep going into 2021 and beyond.

Fox Catering Ltd are an outside catering, private dining and freelance chef Agency based within the Lake District in Cumbria and with over 18 years experience, working amongst Britain’s best chefs, we provide only the best quality and service. Although most of our work is predominantly in the Lake District we have clients based in Scotland, London and Europe.

Fox Catering does things a little different for our chefs. We offer accommodation that is our own staff accommodation "so no getting passed from pillar to post in pokey little rooms with overused beds ". We can also offer taxi service to your work placement (with a small fee). All this plus most of our chefs earn between £30,000-40,000 per year.
