Wedding Cake: sage green and white
An absolute pleasure as always to return to Knebworth Barns and deliver a cake for the wedding of Kat and Stuart!
The couple chose an elegant sage green and white cake design, featuring white sugar roses and foliage with gold leaf accents to compliment their wedding styling.
Guests were treated to a selection of mouthwatering flavours of Raspberry and white chocolate, Belgian chocolate with salted caramel and luscious lemon!

Wedding cake: carrot cake tips
BTS making my carrot cake and top tips!
1. Always weigh the ingredients and prep beforehand. Carrots take a while to grate!
2. Ensure your oven is on and reached the required temp, and the tins are prepped.
3. Mix the oil and sugar together in a stand mixer or by hand. If by hand, slowly add in the sugar to allow it to incorporate . Then add the remaining ingredients
4. Always, par dry your grated carrot. I find it adds far too much moisture into the cake and we donāt want a soggy middle!
Grab 2 clean tea towels, lay one down on a clean surface, spread over the carrot, place a clean tea towel on top and press down - goodbye extra moisture!
5. Add the spices, carrot and (optional) walnuts last to the mix and stir in by hand.
6. Sandwich the layers of the finished cake with Swiss Meringue buttercream, flavoured your way. I like to add in a tiny amount of vanilla bean paste.
