Honoured to be featured in ‘A Taste of the Highlands’ by Ghillie Basan! Our beloved Cullen Skink sits alongside Ghilie’s delicious collection of recipes, showcasing the very best of Scotland.

The book is a culinary journey through the Highlands where award-winning food writer Ghillie meets a host of artisan food producers, farmers, crofters, fishermen and distillers. Featuring one hundred recipes ranging from the traditional to the contemporary, this is a magnificent celebration of life and food in one of the world’s most beautiful places

Try our recipe here:
**Cullen Skink**

2tbsp of rapeseed oil or vegetable oil
75g butter
250g chopped & washed Leeks (separate green tops from the white stalks)
250g peeled and chopped white onions
400g washed & diced potatoes
200g roughly chopped natural smoked haddock
1 tsp ground white pepper
1 tsp cracked black pepper
2 vegetable stock cubes
450mls full fat milk
1 tbsp of cornflour
salt to taste

Cook off the white leeks and onions in the oil and butter in a deep heavy base pot. Cook low and slow until soft and nearly translucent. Add the potatoes and add just enough water to cover the vegetables and potatoes. Simmer until the potatoes are just cooked.
Add the milk and fish and bring back to a simmer, then add the green of the leeks. Mix the cornflour with a little cold water until it forms a paste and stir slowly into the pot. Add as much or as little of the cornflour mixture as you like to make your Cullen Skink as thick or as thin as you like. Check for seasoning and serve. (We like to add some chopped parsley to finish too)

This is a gluten free recipe using the cornflour. You can also make it dairy free by replacing the butter with more oil and use oat milk instead of the full fat milk

Inspired by cooking & ties to the sea...

The 'Redshank' is a mobile, seafood catering trailer based in the Highlands capital of Inverness. We move to various spots around the city and beyond offering a 'street food' approach to freshly cooked, locally sourced seafood & produce.

Our usual daily opening times are 5pm to 8pm and our menu changes every week. We dont do lunches yet but we are looking into it, you can however book us for a lunch or dinner event for any occasion, just get in touch either through our page or give us a call on 07546567940.
