We had a very special 6 Course dinner earlier this week celebrating a recent centenary. Our Head Chef Tessa was able to get creative with the menu as she set out to replicate the menu from 100 years ago! Some of the menu items were surprising and not something we would see today, but great to look back at what cuisine was popular 100 years ago.

First Course: Chicken and clam broth
Second Course: Poached turbot, hollandaise, baby leek
Third Course: Rosemary roasted saddle of lamb, braised celery, light jus
Fourth Course: Butter roasted pheasant, tomato ragu, new potato, tender stem broccoli
Fifth Course: Maid of Honour tart with a Limoncello glaze, raspberry
Sixth Course: Selection of cheeses, crackers, chutney

Last Monday evening, at the kind invitation of UK Embassy Washington and AHDB - Agriculture and Horticulture Development Board , The Worshipful Company of Butchers were delighted to attend a dinner and provide the venue for the Agriculture Trade Mission, who were visiting a range of food producers during a four day trip to the UK.

The delegation led by Ted McKinney, CEO of NASDA - National Association of State Departments of Agriculture, included Commissioners from across the United States of America, who were warmly welcomed to Butchers’ Hall by the Master, Margaret Boanas.

This was an opportunity for several UK meat producers to engage with USA officials and chat over an excellent dinner of British lamb, kindly supplied by Randall Parker Foods.

The conversation flowed over a wide range of subjects with representatives from Karro Food Group, Kepak Group, Foyle Food Group, Cranswick Country Foods PLC, ABP UK, Pilgrim's UK who had also been invited to attend.

It was agreed by all present that it was a great evening to forge connections, thanks to AHDB - Agriculture and Horticulture Development Board and UK Embassy Washington for organising🇬🇧 🇺🇸

Yesterday we had The Boar’s Head Ceremony at Butchers Hall. This is a very special event which can be traced back to 1343!

The tradition began because a parcel of land was give to the Butchers of London to provide them with a place to clean and dispose of offal or any ‘beast entrails’. The cost? The Butchers were to pay up with a Boar’s Head each winter and, despite the fact the land and the practice are no more, we still pay up. A contract is a contract, after all.
