This was delightful afternoon, with only a couple of pictures quickly taken, catering for an intimate wedding a few years back, mixing up the presentation with hessian runners & tattie sacks for the roasties, cheese boards, deli meats & wide variety of other delicious tasters, using eclectic mixes of wood, slate & other textures

Cured for 24hrs then smoked for a further 12 😋

“Cold smoke to Hot roast”

From the initial cure, to the wash, then too the smoker (bit of history) this bad boy is built in the depths of a WW2 bunker)

After resting its off to the Hot roast before chilling then packing
-
The whole process from start to finish takes around 72 hrs, the fire is freshly set 🔥 each time according to the wind speed, so the stronger the wind the bigger the fire (more draw) to enable a sufficient smoke time
-
We also still follow the very same traditional methods handed down through generations, albeit with a proper big oven !
