I just realised I never did a separate post for my birthday cake
I made a whopper of a cake for myself because it was the first time in 7 years I was able to
700 grams in flour alone went into it😆
Decorating though, took all of 5 minutes because honestly, I couldn’t be a**ed about that either
I did wonder what possessed me to make such a ginormous cake to share because I was afraid it would be the one night at my climbing centre when no one would turn up😂
Folks did though and it went down very well. So well that the last photo is the piece I got
Few things make me happier than sharing food, especially cake
So to get to do it on my birthday was extra special 🥰💛♥️

Happy Birthday my sweet girl💚
Vanilla sponge with vanilla icing; probably the simplest cake with the simplest design I’ve ever done for any family birthday
I did jazz it up with some orange zest and my secret sponge ingredient 😆🥰

My last “customer” cake for an indefinite period of time
This year I want to celebrate Divali, the birthdays, Christmas and whatever else in between with my family (furry family included) and friends
It’s been years so I feel like I deserve “me,” and my people deserve “me.”
What a way to go on a break though; back to my basics with cake watercolour.
She was a festive and classy beauty just like the birthday girl; in fact she looked like she was using those refrigerator lights as disco lights 😆🥰💜💃🏾✨

I can never decide how many photos and which photos should make the Instagram post “cut.”
Seeing that nothing gets shared these days, I’m just posting a bunch😆
Also, for the thousandth time, my chocolate cake is delicious 😋

Easy brief🤪
The cake had to be red velvet, must be decorated with red and white,
chocolate drip, loaded with chocolate but don’t make it tacky, two clear greetings and a discreet “k” somewhere…
Good thing I was invited to the party too!!😆🥳

A few days ago, in my not so 100% effort to keep up with the reels trend, I made a reel using photos of this cake. Not even an hour later, I deleted said reel
The truth is, reels make me dizzy. Short videos cause stress on my brain so I don’t even have the TikTok app. If I get sent videos, chances are, I won’t watch unless it’s a video of you doing something exciting; I can’t get excited over random strangers and their lives. But send me a photo of a beautiful moment captured, of a beautifully crafted piece of art and I’m there; I can stare at it for hours.
I know that the primary aim of Instagram for business is to teach and share skill,to keep people engaged in your content and to gain exposure but I’m going to be in the minority and not be stressed by that trend.
Cakes are special. Cakes are to celebrate a moment in time, to mark an occasion where time seems to stop so No, I didn’t want a reel, a speedy flash of this beautiful cake just to be trendy or to get more likes.
I’m not saying never to reels because they can be fun (I did one for my previous post) but I don’t want them to be my norm.
And if they don’t get shared because of some algorithm then that’s ok. Sometimes trendy doesn’t mean best for you so it’s fine to break away from the crowd even if the likes and comments help. It’s ok to remain true♥️

This cake…

Hot humidity is my enemy. I despise it
It reminds me of some kind of evil swamp creature. My cakes hate it too. If you do basic cakes without having some kind of climate control that’s fine. But any variations, you better be ready to keep a clear head and literally go to battle with these piece of s**t weather conditions.
This cake literally collapse on itself over the weekend and had to start from scratch (including ingredient buying with 12 hours to go. From scraping off the royal icing drip the next morning and re-doing the coating to down to the last minute, cutting through wrapping to stick fallen bits off and as I was putting the last of the tape on, the knock for pick up came.
Not for the faint of heart but panic will never be my middle name
It’s only cake after all
And if you’re wondering if the collapsed cake went in the bin, that would be a hard NO. I took it to folks who appreciate a bit of ugly but tasty cake☺️
I managed to run away and grab a much needed drink and dinner with my hubby whilst the second batch of cakes cooled.
Really grateful to my customer for sending me photos of the pleased birthday girl; it makes it all worth it🥰🌈💖

I repeat regularly that I have the best customers and meet the friendliest people through my cakes.
This order was no exception.
I had the pleasure of meeting one of the sunniest customers I’ve ever had; even her initial email request through my website radiated sunshine.
How fortunate am I?🥰♥️🌞✨

Two successive posts at highly unrecommended times must mean rebellion in middle age 😆
Seriously though, when is a better time to get this done other than whilst lying in my hammock in the sunshine? (see stories🥰)

Instagram keeps telling me how to increase engagement, when to engage, how to engage, how often to engage etc etc
I don’t really feel like thinking extra hard today so here is my most fabulous Paris-Brest post smack dab in the middle of Monday
Hazelnut crème mousseline made from homemade hazelnut praline paste, delicate choux pastry with roasted chopped almonds, more praline to top, gold leaf and icing sugar.
Delicious 😍♥️✨

True cakers are very principled.
Principled because we start out starry eyed and eager to please, eager to make our cakes, eager to build our reputation, eager for customers to like our product, even love it.
Then we get burned because don’t set proper boundaries for ourselves and for our customers and we run ourselves into the ground.
Afterwards, we set ground rules to protect ourselves so that we don’t run into the troubling issues that we did when we were naive and wearing rose tinted glasses.
And sometimes, all of these principles and self armour and protection go right out the window.
We take orders a few days before because a celebration needs saving last minute, because the customer is so desperate, the only thing they don’t do is beg.
I do protect myself but whilst I am principled, sometimes, my heart is stronger than those boundaries so I make exceptions.
This past weekend was one such weekend with back to back last minute cakes.
And it’s ok. I was busy but I survived
I’m not able to do it all the time but I’m glad I did for the lovely people I ended up meeting.
Nothing is black and white and sometimes rules are meant to be broken.
Even when they’re your own♥️

I never get tired of roses. Ever.
Not real life ones and not on cake. I remember clearly, being 4 years old (that’s a 42 year old memory!) and smelling every single garden rose I came across; every colour
And I could never decide which ones I liked best.
The cream ones would fascinate me with their pale peach/pink centres; so delicate, sweet and beautiful.
I tried to capture that with these roses for a special 18th.
The brief was classy, elegant with white and cream tones
As much I love colour and try to inject it everywhere, there is something quite elegant about a white, understated cake.
Made with love, patience and lots of tweezer work 🤍💖✨

More than half of my customers are repeat and some have been with me for years.
This particular order was for a customer who has ordered practically everything at various times from viennoiseries to pâtisseries to cakes.
The biggest compliment being that her papa is a retired pâtissier himself.
Sweet Delices has been a long and slow burn that has taught me about the importance of discipline and patience in passion.
I’m rubbish at social media, I update my website very slowly and most of my customers have been through word of mouth.
This is why, I’m even more appreciative of my loyal clients; they’re relationships I cherish.
They return again and again and I roll out nothing less than the red carpet customer service treatment.
Thank you and Merci, dear customers, for allowing me this privilege 💖✨
