Sous vide turkey and stuffing roulade for our Xmas parties and our roastes butternut squash stuffed with wild and long grain rice, roasted pecans and fried haloumi. Its served with a fragrant tarragon veloute asparagus tips and sugar snaps. The kitchen is filled with the fragrance of cinnemon, nutmeg and buttery roast squash😁

The revised date and pecan nut roast. The core raimains but the accompaniments change from place to place. With great reluctance this has become my signature dish, much as I loath the concept. Of the hundreds that have painstakingly made, I have never been had anything but exuberant feedback.
This one, at the Royal Oak Walton, is served with roasted roots, wilted greens, potato and brie croquet with onion and garlic crumb, marsala jus-lie and Thai basil.
