A mix of vintage cheddar with plenty of bite, a nutty Gruyère and a generous whack of parmesan.

A simple but important meal.

After being bad fettle for most of the week, I have had a craving for a meal that my grandma used to make when i was a kid.

Call it a sickness related regression ( i am a man after all) but today i decided to make a simply elevated chips and tuna salad.

I decided to ditch the Saturday night takeaway tonight, (Sorry pizza shops of whitehaven) and instead opted for the most amazing Surf and Turf with garlic mushrooms and crispy home made chips.

A beautifully cooked medium rare ribeye , garlic and chilli prawns combine to make this an irresistible dish.

FISHY FRIDAY!

Classic fish and chips, that British institution and a national dish that everyone can't help but love. You can buy them from one of the thousands of fish and chip shops all over the country, however I prefer to make my own.

I've been looking forward to making this all week, the most amazingly crispy beer battered cod and chips! With minted smashed peas and a tasty tartar sauce

So easy to make and a sure fire family favourite!

Could a chop shop night be in the future??

So...this happened!

A beautiful creamy chicken tikka korma tonight.

Now I'm not the type of guy who would normally order a korma , however when done right it is an amazing dish.

Don't delay and get your order booked in for curry night!

Well the heart wanted butter chicken however the waistline did not,
So here we have "I can't believe it's not Butter Chicken"

Maintaining the same delicious, fragrant spices without the butter!

Paired with an amazing pilau rice this is a dish that is sure to become a family favourite at only 320 kcal per serving, not Inc rice.

A fragrant Chinese pork curry with peppers and green beans. Batch cooked for the rest of the week.

Hunters chicken pie - a family favourite, tender chunks of chicken in a rich and smoky bbq sauce, topped with cheese and bacon mash.

Today I tried my hand at making a new curry, Chicken Tikka Patia, this is quickly becoming my new curry of choice!

Almost like a curry version of Sweet and Sour , this lip smacking curry has plenty of heat and plenty of taste.

When you fancy a curry but are mostly watching your calories....then how about a Chicken Balti that contains only 373 kcal per serving, alongside Bombay Aloo (167kcal)
Not including the Bunjarra paste that I just had to include!

Incorporating the same spice mix, same authentic flavour . This is perfect as a meal or a light lunch

Big on flavour , little on calories

One thing I like to do is take a classic recipe and see how it can be elevated in some ways,

Still practicing my ceaser salad, I decided to take it up a notch swapping in little gem lettuce and kale with the inclusion of smoked lardons. This combined with the classic caesar dressing makes a perfect night shift snack (which is exactly whats happening tonight!)

I bought a chicken with the intention of creating something inspired, however the family requested chicken dinner so who am I to disappoint?!

Creamy mash, balsamic roasted veg, buttered cabbage, crispy rosemary infused roast potatoes , homemade yorkshire pudding and the pièce de résistance... real gravy!

Well I had a plan this morning, a classic chicken caesar salad for tea.
Until someone suggested steaks on the outside grill and then that was all I could think of so I decided to grill up some amazing bbq steaks , crispy chips and peppercorn sauce with...an amazing caesar side salad.
Sourdough croutons beautifully seasoned were a welcome addition
First time making caesar and im impressed with the result!

A birthday steak dinner - the most beautiful cut of meat for the most beautiful birthday girl

Fillet steak and a ribeye beautifully seared (although the grill marks are difficult to see) before being pan fried in garlic butter and fresh rosemary.
lemon and garlic butter asparagus and at special request a side of garlic mushrooms with the most amazing home cooked onion rings.

Post workout meal for today BBQ flavoured chicken breast with quinoa and roasted balsamic veg

Who said flavour has to be unhealthy ?!
