Very nice light sourdough loaf.
780g white strong flour(t55)
500g water at 22 degrees c
250 g white flour starter
18 g salt
6 hours bulk fermentation
With 4 Stretch and folds
Proof for 10 hours in fridge
Baked in a Dutch oven at 250 for 40 min
