Butter Chicken
This is one of my all time faves!!
This Indian Curry has many versions dependant on regions. But I have tweaked a few different ones until settling on this, my fave.
Like Korma, this has Cashews and fried onions, blended to a puree, but instead is added along with tomatoes for its base.
Flavoured with all the usual staples to create that curry flavour such as, cardamoms, cloves, cumin, garam masala and others of course, it gets an extra hit of creaminess with butter and a little bit of heavy cream!
Chicken pieces are marinaded over night with a mix of ingredients including yoghurt and garam masala, then they are grilled off to give a slight char to the flavour, then added into the sauce to finish the dish.
If you have never tried it before, it is a MUST!!
