Good morning everyone ! I do not know how I managed to only take ONE picture of this family favorite in springtime … so I apologize for this so small picture that contains such a great taste !
It is actually a giant choux filled with crème diplomate and fresh strawberries topped with a white chocolate and Sicilian pistachio glaze. We have many options for the glaze, in the past I was topping it with chocolate ganache, but the Italian influence has hit me hard and I found this combination equally interesting.

This is why I love baking. Baking conveys love through food. Have you ever seen a sad face around you when there is CAKE ? It is such a unique, pure feeling of joy and excitement just because there is a piece of cake ! What a strange expression of «piece of cake » conveying SIMPLICITY…. Maybe because a simple piece of cake can bring so much happiness ♥️

Many times I am asking myself, if I were to open a bakery tomorrow, which 10 recipes I would be confident and proud to sell ?

My carrot cake is definitely one of them. Generally the Americans who are exposed to baked cakes and sponges, get crazy with this recipe, but I have to confess even the rest of my customers, friends and family love this recipe. For me the success lies in the moisture coming from tons of apple, pear, apple and pineapple, fresh ginger and lemon zest, coupled with an airy cream cheese mousse !

Xmas baking is full on, combining my origin with my passion. Melomakarona is the traditional Greek cookie for Xmas, a delicious aromatic cookie made with olive oil, orange and honey. You don’t need any other aromatic candle for Xmas as this cookie does all the work overwhelming your house with winter aromas of orange and cinnamon 😍. Xmas macarons’ inspiration is white chocolate and pistacchio hand painted in Xmas colors of gold, green and red. I am so in love with baking macarons, they are so beautiful, unique and their flavor deliver such wonderful balance !

Today I had no inspiration for a post as it is a very busy weekend but if there is one thing I can say watching this cake is that I absolutely adore baking, and it is funny to say but I think my customers are doing me a favor ordering and paying me because I just LOVE it and wish I could stay in my kitchen all day and bake-bake-bake.

Part of my everyday baking journey is a series of courses I am taking to improve and sometimes even perfectionate my skills in my field of passion.
If I could name my advent calendar of 2023, I would call it Creams and Textures. This week I have been focusing on baked cheesecakes and this is a biscuit cheesecake topped with famous biscuits. It’s a rich recipe and the biggest learning for me has been how to achieve a perfectly smooth cream cheese avoiding the crumbly and some times too buttery texture.
My goal is to acquire more understanding of the chemistry involved in baking by the end of my Advent 2023.

Macarons 😍

One word, 1000 hours of labor. How much respect I have for those who know all about macarons!!!!
Personally I have done 2 courses of French macarons and maybe have thrown in the trash 100 trays of cracked shells, shells with ni***es, non symmetrical shells etc etc.
Finally I am proud to be able to bake flawless, divine macarons, smooth, moist, aromatic, like a small bite of a spring cloud.
Hard work, dedication, fail, persistence, accuracy, precision.

Merci to my friend who gave me this wonderful recipe book from the one and only who built upon my knowledge and made me fall in love again with this art ♥️

Siblings never cease to amaze me….
I have two fantastic boys who are very very different from each other, and I am always very amazed with their attitude to life, their choices, their tastes. I am very proud of them and very impressed with what DNA can do …. Respect to the biologists who claim that 80% is pre-decided by nature !

Today I decided to post the cakes of two sisters, one turned 17 in March and the other 25 last week. They are so great and so different as well and their personalities are depicted on their cake choices.
Sofia chose a double chocolate mousse cake covered in the romantic Mamma Mia theme while Alessia chose a vanilla salted caramel recipe with a witty message on top.

Cheers to diversity, cheers to siblings, cheers to creativity, cheers to decadent cakes !

Chocolate Babka, chocolate brioche, chocolate tsoureki… whatever you may call it, it is soft, moist, chocolatey, irresistible, homemade with love and just ideal for breakfast or afternoon coffee.

Now that my big fan lives in London, my lifetimes partner is in Paris and my little consumer is in Milan, my big baking days are primarily for customers who enjoy my everyday bakes.

This could be a very long post with various possible directions like ‘authentic Italian tiramisu recipe’ or ‘make a winner refreshing dessert’ but today I would like to speak about the fashion of no sugar, no fat, no calories, no dairy, no taste 😝recipes. Outside the allergy related restrictions (in this particular case this tiramisu is a sugar free recipe), in my opinion, all the rest of the fashionable dietary restrictions need to be challenged. What makes pastry harder than hot kitchen is precision, chemistry and balance of stabilizers. The two main stabilizers in a dessert are sugar and fat. So, simplifying the explanation, whenever we cut down on fat, we replace with sugar and vice versa. If you want a cream to stand in a cake, by cutting the obvious unhealthy ingredients, you have to add other stabilizers like gelatine or overuse the ‘safe’ ingredient.
Everything should be consumed in moderation.
Have this one piece of delicious cake.
Drink one glass of your favorite cocktail.
Enjoy a modest portion of fresh pasta.
Eat your breakfast slice of white bread.

Stop demonizing food. Enjoy everything in moderation. Do not fool your health system with dodgy replacements that the industry persuaded you they are safe. Nothing is too bad if it is not repetitive, over-consumed or processed.

Eat naturally, enjoy every moment, share experiences with family and friends.
There will always be a good moment to share a cake.

So this is not a typical Valentine’s post, but a post characterizing who I am. I utterly adore baking. Weekends are even busier than weekdays. Especially because I can’t hold myself at home but still have loads of things to do.
Last Saturday boys were sleeping, big boy was on a long ride and I had arranged to walk with my friend under the winter sun.
My fav kitchenware is definitely the dutch oven since with the lid you do protect the food, slow roast it, leave it unattended and come back home with lunch ready.
This recipe is based on the original recipe of my dad, but simplified. I don’t know if this the best recipe but definitely it is the recipe of the best dad ❤️.
The original recipe used rabbit meat, but clearly you can do with chicken - beef or wild boar meat. I chose the deboned because rabbit has too many small bones and it makes it complicated, as well as I bought pealed onions from the green grocer’s to avoid crying for 2 hours

INGREDIENTS 4-6 people
1.5 kg of deboned rabbit meat
2 kg small whole pealed onions (ideally red)
50 ml of balsamic vinegar
50 ml of red wine
4-5 bay leaves
4-5 cloves of garlic chopped
A small cinnamon stick
100 ml of extra virgin olive oil
300 g of pealed canned tomatoes crushed
2-3 tablespoons of thyme
Salt and pepper

HOW TO
Season the meat with salt and pepper and place all the ingredients in the dutch oven. Mix gently with a spoon. Put in a preheated oven in 170 C in air for 2.5 hours.
Then uncover the dutch oven and let it caramelize for another 15 min if needed.
Serve with fresh bread, French fries and some fresh green salad.

P.S. I have included the first page of the recipe hand written by my dad in Greek obviously - while he was interviewing his mom over the phone. The second page I didn’t include because it has also some phone numbers of people I didn’t know !

Some former children and current young adults leave for university while other celebrate their graduation. This makes me so emotional because I am currently in this transition phase and I feel so proud of all this generation who works hard for their future and dreams big and struggle to make everything good happen. This cake extra special meaning for me because it was made in spring for the daughter of my Italian friend who finished university in Milan. She moved to Milan from South Africa when we also moved in Milan and she became my ‘step daughter’ or ‘niece’ in good and hard times during Covid. Since then she completed her degree and is now working in Munich until she opens a new exciting chapter in her life ❤️.

It has been such a long time since I posted that it is harder than I thought. Yes, I have been silent, but non inactive. I have baked a lot and cooked a lot but in the second semester of 2022 I chose to enjoy the last year together as a family of 4. My eldest son finished school and happily left home for his new life, so my focus was to enjoy every single moment with all of all being together.
This morning on a long walk, my Greek friend urged me to come back to posting… so here I am, always excited with cakes and creams and happy to be back to communicating with you my passion.

Who doesn’t enjoy cupcake decoration?

We bakers have started our career mainly because of our hobby. Because we love color combinations, we are creative, we enjoyed arts and crafts when we were kids. Then this hobby usual turns into anti stress psychotherapy, and also demonstrates our caring personality, our will to please our loved ones and put a smile on their faces. It also reflects our passion for good ingredients and offering the best to those for whom we care.

I have created so many fancy costumes for my boys over the years, book characters, strange insects, Halloween monsters, caps, wings, face paintings even in times where I was working in corporate and my free time was practically zero. I never suffered! I was always so excited to create something unique! Then my creative hands coupled with my everlasting passion for food and I turned my hobby into a profession that makes my friends and customers smile during their special celebrations.

In covid times, when parties are not organized anymore in special locations such as Baking Party, I created a home edition do-it-yourself cupcake theme where you can order all your cupcake decorations and have all delivered to your place without stressing about anything.
