Notice a difference between these oysters and those you've eaten before? If you look carefully you'll notice the adductor muscle (circular muscle at 3oclock) is on the right side and the mantle is fully intact. There are also no puncture wounds to the belly. Most oysters are poorly shucked. The adductor muscle will be located on the left because so much damage is done to the oyster in the shucking process that it is flipped to look more presentable. So you're getting less oyster! Not only less oyster but you're getting an oyster that is already mangled and the texture is much less yummy than that of a properly shucked oyster.
