HOW TO MAKE BLACK SOUP
INGREDIENT
* Washed bitter leaf
* Uziza leaf
* Scent leaf
* Palm oil ( or palm fruit juice )
* Goat meat
* Mackerel fish
* Dry fish
* Onions
* Scotch bonnet pepper
* Crayfish
* Dried prawn
* Grounded Orioma seed
* Seasoning cube
* Salt

PREPARATIONS
* Wash and blend the bitter leaves, scent leaves, uziza leaves, onion, pepper crayfish together and set aside.
* Wash the goat meat, transfer it into a pot, steam using salt, chopped onions, seasoning cubes and cook for 15min. Add some water after 15mins and cook until it's 80% done.
* Wash and add the dried fish, prawn, mackerel fish. Add the orioma seed, palm oil or palm fruit juice and gently stir. Allow it boil for 2min then taste for salt, seasoning cubes and add if necessary.
* Add the blended leaves and gently stir to avoid breaking the fish. Allow to boil for awhile to thicken.

How to avoid air pocket in buttercream

As a beginner, one of the major reason your buttercream isn't smooth no matter how hard you try is when there's air pockets.

What's air pockets? It happens when you overbeat your buttercream. You incorporate so much air into it and it's lighter than usual so no matter what u do, it's never smooth.

Yes, Buttercream can be over beaten and the result isn't funny.

How do you avoid air pockets in buttercream?

It's advisable to use your hand in mixing your butter and icing sugar (margarine as the case maybe). If using your stand mixer, the paddle attachment will work just fine as your whisk attachment will only help to incorporate more air to it. Stop mixing when your icing sugar is properly mixed and there's no white dust!

HOW TO TEST AND KNOW IF AN EGG IS STILL FRESH

Eggs play an important role in everything baking, ranging from cakes and cookies to meringues and pastry cream.

They create structure and stability within a batter.

They help thicken and emulsify sauces and custards.

They add moisture to cakes and other baked goods, and can even act as glue or glaze.

A good and healthy bake requires a fresh egg.

Here's a simple test to identify it
- Simply fill a bowl with cold tap water and place your eggs in it.

- If they sink to the bottom and lay flat on one side, they are fresh and good to eat.

- If they float,they aren't fresh.
A bad egg will float because of the large air cell that forms at its base. Any floating eggs should be thrown out.

FONDANT ICING (WITH GELATIN)

Ingredients
- 1kg Icing Sugar
-1/4 Cup Water
- 1 Tablespoon Gelatin
- 1/4 cup Liquid Glucose
- 1 Tablespoon Glycerine (Optional for me)
- Vegetable shortening for Kneading
- 1 Teaspoon Pure White Flavour (optional)
- 1 Tablespoon CMC


1. Sift icing sugar and CMC together in a large bowl and keep aside. Please close bowl completely to avoid contact with any dirty.

2. Pour water into a Small bowl and place in a sauce pan and sprinkle the gelatin on top to soak up and soften for 5 minutes.
Heat up the sauce pan and stir until the gelatin is clear and completely dissolved,
Don’t boil or cook the gelatin please

3. Add glycerin and glucose into the dissolved gelatin and stir until well blended.

4. Add flavour if using it, and pour mixture into icing sugar mixture and mix until all the sugar is well incorporated.

5. Knead the fondant on work surface using extra icing sugar or corn flour, until stiff.
*(For stick fondant, you can add icing sugar with little water while Shortenening can be added to hard fondant)*

6. Form into ball and tightly wrap up in a nylon or plastic bag and place in a sealed container *If you're not using it at the moment*
