SUGAR FREE MAPLE SYRUP RECIPE

Ingredients
1 cup water
1 cup Splenda
1½tsp maple extract
1tsp xanthan gum
1tsp vanilla extract

Procedure
1. Pour water in a saucepan and place on heat
2. When water gets warm, take ½ cup into a bowl, add in xanthan gum and stir properly to mix then set aside
3. Let the remaining ½ cup of water boil then add Splenda to it and stir to dissolve
4. Add in xanthan gum mixture and keep stirring till everything is well dissolved and combined
5. Put off heat, add in maple extract and vanilla extract and mix well
6. Let cool and transfer to a container, cover and store.

OAT MILK RECIPE

Ingredients
1 cup rolled oats
½tsp salt
1tsp vanilla extract
5 pitted dates
4 cups water
You can omit the salt, vanilla extract and dates if you want plain milk

Procedure
1. Add all ingredients into blender and blend till smooth
2. Use cheese or straining cloth or bag to strain, squeeze out milk
3. Refrigerate.

COCONUT MILK RECIPE

Ingredients
Coconut
Warm water just enough to blend
Procedure
1. Break coconut and remove water
2. Cut into small pieces and pour into blender
3. Add in warm water and blend till smooth
4. Strain to get the milk
5. Filter again to remove any left chaff
6. Refrigerate and use.
NB: In making coconut milk and flour, same coconut can be used. After blending, you strain to get the milk while you use the residue for flour. The water used here should not be much so as to get a rich flour and thick milk. The quantity of water in making coconut oil may not matter so much as it will still settle later, nonetheless, still be moderate with it.

OIL BASED VANILLA CUPCAKE RECIPE WITH FROSTING

Ingredients
VANILLA CUPCAKE
500g all purpose flour
500g sugar
3 tsp baking powder
1 tsp salt
1½ cup (300g) milk
¾ cup (163g) vegetable oil
1 tbsp vanilla extract
4 large eggs

VANILLA FROSTING
250g butter
500g powdered sugar
1 1/2 tsp vanilla extract
2–3 tbsp milk
pinch of salt
Instructions
1. Preheat oven to 350°F (176°C) and prepare a cupcake pan with liners.
2. Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside.
3. Add the vegetable oil, vanilla extract and eggs to a medium sized bowl and combine.
4. Add the wet ingredients to the dry ingredients and beat until well combined.
5. Slowly add the milkto the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined. Please note that the batter will be very thin.
6. Fill the cupcake liners about half way and bake for 15-17 minutes, or until a toothpick comes out with a few moist crumbs.
7. Remove the cupcakes from oven and allow to cool for 2 minutes, then remove to a cooling rack to finish cooling.
8. To make the frosting, beat the butter in a large mixer bowl until smooth.
9. Add 2 cups of powdered sugar and mix until smooth.
10. Add the vanilla extract and 1 tablespoon of milk and mix until smooth.
11. Add remaining powdered sugar and mix until smooth.
12. Add remaining milk, as needed, and salt and mix until smooth.
13. Pipe the frosting onto the cupcakes.
