An easy and delicious vegan party plate.

Quinoa & Wild Rice with Grilled Asparagus, Citrus Golden Beets, Roasted Peppers, Carmis, and little wedges of Vegan Burgers. Plus there was some pesto dipping sauce off to the side for the burger bites and veggies.

The burgers are great! Good flavor and they grill up nicely, taking a char on the outside while staying flavorful on the inside.

Menus like the food in this pic are great for fun, easy weddings and dinner parties. We serve them family style on the table so everyone gets just what they want. Add some grilled chicken or Italian sausage if you'll have some meat eaters there.

A good balance makes this board hearty without it being heavy. Perfect for a patio party or spring/summer wedding.

Grilled Garlic Toasts with melted mozzarella. One with sauteed mushrooms and grilled chicken sausage. The other with sauteed onions and melted marinated tomatoes. Both very good.

Nice, simple chèvre could be my favorite bruschetta base. Here it’s topped three ways:

1) Tapenade and Chopped Garlic Kale
2) Pan Roasted Mushroom & Scallions
3) Spinach Pesto and Roasted Tomato

Crisp on the outside, chewy in the middle grilled baguette with our slow cooked caramelized onions, spinach pesto, a little tapenade and roasted cherry tomatoes.

Our Pan Roasted Red Pepper Pepperonata made with roasted red peps, olive oil, balsamic, a bit of honey and a little salt.

Good as a dip, a pizza sauce, on bruschetta, in pasta...

Grilled bruschetta. Done all the way in the grill pans (which are among my favorite outdoor cooking tools).

Both are on rye. One has her pickled golden beets with the last of the camembert from the picnic pop-up with garlic & parsley mushrooms + scallions. The other - sharp cheddar, pepperonata and roasted sweet potato. These will be nice options and bruschetta bar parties this summer.

If you make something like this at home grill both sides of the bread before topping and then once topped put back in the pan on lowish heat and top loosely with another pan to bake them a little and bring it all together.

Little toasts I made with the treats from picnic last week. These would be great at an intimate summer wedding or backyard hello-to-summer patio party. I toasted the rye bread in a grill pan, spread on the Bell & Goose camembert and topped 'em with shirley's pickled golden beets and the tinned smoked trout from . The bread is nice and rich so holds up well to a good pan toasting. The flavors all complemented each other wonderfully.

Lovely picnic kit from and . Really nice stuff all around. Chewy homemade bread, sunshine bright pickled golden beets, lightly smoked trout, wonderful camembert, red wine and chocolate cookies(!) plus two nice trays and two cute utensils. Each piece of the menu complemented the others. So good!

Saturday Bagel 🙂. Toasted Everything Bagel, Mashed Avocado with Lemon, Scrambled Eggs, Sliced Red Onion and the Wild Smoked Sockeye from which is pretty good. An excellent way to start the weekend.

Carmis in reverse. Caramelized onions are easily my favorite cooking element. They have so many uses - on a sandwiches, in pasta dishes, on a burger, as a base for sauces, puréed up into a dressing, mixed into dips, with cheese, on their own... These photos show some parts of the process from end back to beginning.

Working on some lunch/snack boxes. I like to have some cooked elements in these. Here, in addition to the salami, cheese, olives, etc are some roasted carrots & white sweet potato + carmis. Also parsley pesto. I like the mix but it’s tough to get everything to look great in the box.

Mac and Cheese tests... two ways in one pan. Extra cheesy shells on one side and penne with peppers and onions on the other. The shells are more traditional but personally I like less the less sauce and more flavors of the penne. In the end, all was eaten. 😏

Kale Salad Close-Up. Our Kale Salad has flash cooked kale, roasted butternut, dried cranberries, toasted sunflower seeds, a little sautéed onion, lemon zest and olive oil. Very simple but the flavors and textures work together. It’s fresh and filling.
