"Marriage is when two imperfect people refuse to give up on each other". Don't remember where I heard it, but I love it!
It's been a year since we stood before Hashem (G-d) and close friends and family and promised to never give up on each other. It's been the best year of my life and I know in my heart it's only the beginning. Through this union I finally feel complete. Our 3 beautiful children continue to make us proud. A Mom Is Forever

What can you say about one of the most special gifts given to us on this earth, a Mother! She is created as a special “garden” to grow us, nurture us, develop us! She helps you to bloom fully and beautifully, as the sunshine and the rain! She takes care of you, educates you, and sacrifices for your betterment. That’s an amazing Mother and is at her core what she is destined to be!!

Do you know how you will honor a Mother today....It may be that you have experienced this relationship with a different form of “Mom”, perhaps with a close female relative, an amazing teacher, a loyal friend, a special mentor, or simply any glorious woman who holds that role for you. You must show her what she means to you, how she has guided you or how she has been there for you in any way. She is the sweet voice when needed or a stern one when required. She is the guide for the paths to take, the warning for the roads to avoid, the spark for the smile on your face, and the warmth for the embrace you long for. She is the first teacher, the first discipliner, the first coach, the first nurse, the first friend, the first love, and the first forever blessing on earth!

Count On Him!

What are you counting on this season? Counting is crucial for this time frame, as we do with the “Omer” before Shavout. We do it upwardly as we create a better us to be able to receive God’s Torah in the right mind frame. In the physical world, of this time period across the globe, there is a lot to cleanse from, the germs around us, the crowded places, and negative attitudes. During this holy period we can focus on not just cleansing our outer self, but our inner one. For my Counting of the Omer’s season, I look to cleanse areas in myself that need work. At the end of Day 49, and I reach Shavout, I want to Give God something worthy of him, clean and honorable.

For me the extreme focus for this time frame is on family and the light God shines on this area. I have come to learn that family is an essential force to all things successful! Without the right family situation or right family support we lose in every aspect, we are let “down”. When we create the right family recipe and place our energy and focus on making this area a “blessing” we are lifted up! Our home is an extended “Temple” and how we treat it either allows God in or will it collapse to the ground. I worked on this more than ever and I have come to build it up the way God would be proud. I have worked to raise it up and “count’ towards my blessings. How will you welcome God in, are you counting on the importing things, how will you invite the Head of All Households...let’s count on HIS always being there!

Pesach, Ole!
We are still on our exciting world tour of cuisine; and to keep on track with this spicy adventure we are going to celebrate the holy holiday of Pesach in Spain this year! Pesach, of course is one of the most important holidays in the Jewish faith, as it commemorates the end of slavery for the Jews in Egypt and into freedom in the promised land. God has Moses lead his people out of bo***ge and into their awaited world, so the foods used in this celebration help to signify the journey and arrival of a people to freedom.
This holiday is a tale of an ancient time, but we don’t have to keep the flavor of the food, for its celebration, ancient...spicing up the food does not take away from its value but only enhances it. So, we will use the cupboards of the Spaniards, and a little Latin American sazon too, to give extra flavor to the Seder, a new holy dining experience. We venture to the fun and variety filled eating style of Tapas dining. Tapas is the display of many small plates of food to taste from. An array of foods, either hot or cold, is placed on the table and you can pick and choose what to taste without overstuffing yourself. It’s sort of a stylish meal of appetizers! Tapas also allows you to create dishes that cater to specific diet needs (gluten free, vegan, nut free, etc.) without having to create large portions and end up with a ton of leftovers. Since it’s a display of small plates you can set up the table like a white canvas and splash foods of color, shapes, and textures to create a work of art for guests to walk into. How appropriate then to commemorate Pesach with such artful beauty. It could be gorgeous and scrumptious all at once! The key appearance on this menu is matza bread (for the unleavened factor) which is essential for this holiday. Also making top billing appearances for this holiday roster are bitter herbs, eggs, charoset and the roasted shank/chicken neck. I will take all these items and add Latin spices, herbs, exotic flavors and colors to bring to life the Pesach Tapas table. Traditional foods can be infused with other cultures, we don't lose the story or heritage if flavors are new, it just makes it tastier

France, Arrive Anytime!

Last week we traveled to Japan, this week I am whisking you away to France...Ooh Lala! The French we know take food very seriously and the process of cooking it is an artform all its own. You may be familiar with the very popular French pastries, cheeses and wines, but I am going to introduce you to the grand French Omelet.

A true French Chef takes the folding of eggs very seriously, it is actually one of the first things a new cook must master...are you up for the task? Here is where technique is the shining factor of the dish, which is so evident with French cooking. It is a delicate process that produces a beautiful and delicious final portrait of elegance. I wanted to take you to the French for the Omelet scene, as it is something that can be traveled to for breakfast, brunch, lunch, or dinner. The Eiffel Tower, Monet, and the French Omelet....all French Masterpieces, you will thoroughly enjoy!

First Stop, Japan!

I already spoke to you last week about taking a trip somewhere together, so I decided this week our first stop is Japan! Since we can’t travel in real life right now, I’m taking you around the world with our cuisine! Our taste buds will do the traveling for us, ooooooh I can’t wait!

Japan offers so many options to pick from, it has amazing freshness and all the major food groups are represented in one main meal, sometimes in one bite! That country offers us the Udon Soup, the soup that is the main meal. It’s especially perfect here for us now in the cold winter season because it’s filling us with liquid warmth and hearty healthy substance. This is also a meal that is very easy to keep Kosher, Vegan, Gluten Free, or whatever is your preferred eating form. You can also change it around and have so many variations to keep it original and fresh, from seafood, chicken, beef, tofu, or just vegetables alone. Even just switching the vegetable ingredients every time keeps this meal, always, in new form. Since the soup requires the long Udon noodles, the kids don’t mind having it on the menu either, it’s not the usually boring soup they are used to eating! Hey if the kids are on board, and I know you and I are, let’s make Japan a regular destination!

Udon - makes 2 plates

2 cups of Rice Noodles
8oz of Mushroom
2 Semi-Hard boiled eggs
Âź cup of Red Bell Pepper
½ cup of Baby Spinach
8 Sugar Snap Peas - diced
Scallions for garnish
S&P

Broth:
2 cups of Boiling Water
3 tbsp of Tahini
1 tsp of Salt
1 tbsp of Lime Juice

Cook rice noodles according to package directions.
Sauteed mushrooms with S&P to taste.
Make the broth by combining all the ingredients and boiling it together for 5 minutes.
Assemble all of the ingredients on plate: Noodles, Mushrooms, Pepper, Spinach, Snapped Peas. Pour broth over it.
Garnish with Scallions and egg cut in half.
Enjoy your Udon dish!! 😁😋

Disguised For Blessing!

Centuries ago, a heroic female in Biblical and Torah history, Esther might not have known what her destiny was to be. As she was growing up she suffered struggles and ended up married to a King she did not love. However, she was to realize this whole set up was “disguised” in her true destiny... to save the Jews from genocide at the hands of a tyrant. From here the glorious holiday of Purim is born!

We honor Queen Esther during Purim, in our illustrious costumes, a grand feast and thankful festivities. Traditionally, the Hamantasch cookie is made at this time, symbolic of the villain Haman’s hat, and the final end of his anti-Semitic crusade against the Jews. Esther is the hero that saw to Haman’s demise and deserves a feast in her honor, and we are “costumed” to hide ourselves in the midst of the regular events which are there to serve a higher purpose. During Esther’s time, God likewise disguised himself in the midst of the people to watch the true blessing of destiny unfold for Esther and the Jewish People. Esther might have had hardships, but when the time came for an opportunity to be a blessing to her people, she found what her purpose in life was to be. Sometimes we all struggle in our lives, but we eventually we come to realize it's just a “Cover” over what will soon be unveiled! Let’s celebrate our true blessing of destiny...God is revealed in our midst, always!

So, there is not much comfort in eating out right now with everything going on! If you are anything like me, you might be more cautious of exposing yourself to crowds having little ones at home. Unlikely Pair!

You’ve heard of Chocolate having so many amazing partners, Raspberries, Strawberries, Blueberries, Almonds, Espresso Beans, Caramel, Peanut Butter, and the list goes on and on. That Chocolate gets around!! Did you know that Chocolate also entered the vegetable world and was able to dominate there too, really Chocolate and a vegetable? Let me introduce you to the stylings of Chocolate and Avocado! The Guacamole VIP, Avocado can hang out together with the Dessert VIP, Chocolate, and create the magical performance of a healthy dessert, Avocado Chocolate Pudding.

Dessert can be healthy if you substitute some of the ingredients, and it doesn’t sacrifice taste, it can make it even better. I created a Chocolate Pudding that is made thick and creamy by using an Avocado as the base. Then I add Cocoa Powder for flavor and also add Vanilla, a little Lemon Juice, and Honey (or Maple Syrup if preferred). Mix it all together and then place in individual cups and top with your favorite extras, whip cream, nuts, or fruit. You can replace this with any regular dessert, and no one will be the wiser! I served it for my family and now it’s a regular on the dessert menu! This “unlikely pair” you will unite for life, another beautiful love story!

Tikes and Touchdowns

This Sunday is one of the biggest events in sports in the United States, whether you follow football or not. The Superbowl is here and it’s time for fun eats, fun commercials, and fun football! For me, I make it not only festive for the adults in the family, I make it special for the little tikes too. If you involve them from the start, they will be excited for the event and maybe even watch it with you, without nagging to put on some animated series or Youtube videos.

Let’s face it the most fun part of eating for the kids is dessert (well maybe us too), no argument there! So for this special event I have the kids in my household making Brownie Footballs. They get so exciting making them and later eating them, while we watch the game together! If you are strapped for time to create these fun snacks, use the box mix and use the rest of the time to shape the brownies and decorate them with the kids. If you have extra time, then you can create the batter from scratch. After they are done baking you can decorate the brownie footballs with the icing colors of your favorite team and explain how the game is played to them so they can follow along later when you put it on TV. The kids will feel a part of it from beginning to end, and in the fourth quarter that’ll be your favorite touchdown scored! We can all “Victory Dance” to that!

Be Grainful!

We continue on our vegetarian month of yummies, and since I love infusing foods from around the world, I am flying us to the land of Asian flavor this week. I’m “Grainful” to have a new salad I created to add to this repertoire. Salads don’t have to be mostly green and full of all types of leaves. You can actually have a fabulous salad that eats like a meal, it’s super hearty and keeps you “stuffed” in a good way.

My newest debut at the Grand and Essex market is my 3 Grain Salad, with Asian style Ginger Dressing. The three grains you might ask are, Farro, Quinoa, and Barley and I add edamame, carrots, bok choy, and bell pepper, with my own mix of fresh ginger dressing drizzled on top for that classic Asian flare. It has been very popular at the market and will be in your home too. It fits our health-conscious meal plan and still so very flavorful you’ll forget you are eating a salad. Not only you, but your whole family will be “Grainful” too!

Team Veggie!

Not sure you have noticed, but I have been on a vegetable highlight for this month, cleansing all the damage we did with our celebratory holiday food. Of course, we all know that “celebratory” usually means fatty, unhealthy, and full of calories. Today, I am going to reintroduce you to one of the heavy hitters of the Vegetable Team...The Eggplant. This is a super versatile MVP, very filling and amazing textured product that you can create wonders with.

I have created an herbed Eggplant dish that you can eat hot or cold, side dish or main event, baked or fried, depending on how many calories you want to cut. (Psst...just a reminder the fried is great for events like Hanukkah for when it rolls around again.) I prefer baking the Eggplant for right now, after which, I create a rub to add on top made of blended walnuts, garlic, and oil. Then, I spread fresh chopped parsley over the top. What super flavor this has and not to mention aromatic, beautiful and healthy. Eggplant is so thick and juicy, it’s almost like cutting into a steak...almost! So hit a homerun with this star player when you are looking for a healthy game...you can’t lose when you’re on Team Veggie!
