Cut the wood on my miter saw and it smells incredible.

THANK YOU EVERYONE! ALL PROFITS HEADED TO BEIRUT RELIEF EFFORTS via HHRD which is already on grounds, helping. Look ‘em up!

We had a PHENOMENAL weekend, of cooking, smoking and reminding each other WHY we are doing all this.
My children were active contributors to this effort, and it is always great to see them embrace doing the good thing, the better thing.

To the customers - you were all great. Genuine feedbacks, so many happy stories and more.

Lebanon is hurt badly. I personally have friends who used to work in that port. I don’t know how they are or where they are right now. It’s a waiting game.

Friends help each other do good & encourage good.

My friends over at and are sending monies to the relief causes in Lebanon. I’m following their lead.
As I smoke/grill this weekend, my daughter who helps bake all desserts for Mighty Fine Meats will see us all do the right thing, the better thing.

After an awesome weekend of smoking, comes time to clean the ol’faithful smoker, the incredible Weber Smokey Mountain. What a beast of a machine. Charcoal. Wood. It takes it all and delivers magically delicious meats.

“Signature Honey Habanero Brisket: Fantastic bark! A sweet heat kick of delish tender beef! I WANT MORE” -Customer

This is what this Eid is looking for some.

One customer said “it’s a rich burst of flavor exploding in my mouth”. I’m pretty sure he took a huge bite of the brisket and his brain melted in joy.
“The sauce is just perfect - sweet, sharp and blending into my mouth fireworks”.

Either way - I’m loving making these briskets and feeding peoples.

Now, who to feed next?

And then there are magical days like this, when a prime brisket comes out just right.
Rough-a-licious. RICH BARK TEXTURE. Heavenly smelling. My fellow Pitmasters know that feeling :) It’s a reward in its own after 18 hours of slow smoking over charcoal & hickory wood. And the cutting is yet to come.

This is my new smoked meat rub, based on a customized Berbere seasoning. thx to & for great meat guidance!
