BBQ Bacon Burnt Ends aka “Bacon Candy Bites” have made quite an impression this season. I pack on sweetness in the rub and by using cherry wood smoke. It balances out the bacon’s saltiness then I hit it with a mild spicy sauce to bring it all together. Highly Addictive.

A huge hit this weekend were these Beef Brisket Burnt Ends 🤤 Smoked using Oak and Hickory wood, tossed with a spicy bourbon sauce, and then back into the smoker to cook the sauce into the beef.

This summers addiction is ribs! St Louis Ribs are the result of trimming off the tip from a rack of Spareribs which gives you “Rib Tips”. My true addicts have been ordering St Louis racks for their main course, and rib tips to snack on as a appetizer or to save for the next day. Just because it isn’t on the menu, doesn’t mean it’s not available.

Kalua Pork, a traditional Hawaiian Dish. I Salt the pork, smoke it over Mesquite wood and then wrap it in Banana Leaves, then continue to cook it at low temperatures until it’s pull apart tender at 200° internal temperature. Very unique flavor, goes great with Sweet Chili Sauce and my Mango Pineapple Coleslaw on Hawaiian Sweet Bread.

If you’re cooking outside and not using lump charcoal while grilling or smoking, I highly suggest it. Lump charcoal brings a great flavor to everything that it cooks because it is natural hardwood that’s been turned into coal. It burns hotter and last longer than traditional briquettes too.

Cooked up more Hawaiian style BBQ. First time smoking Kalua Pork, very unique flavoring, I’ll make another post dedicated to it.

Brisket, it’s a beautiful cut of beef that demands time to achieve a tender and juicy finish. This is a classic “Texas Style” brisket flat recipe, seasoned with Salt, Black Pepper and Garlic Powder , it’s Smoked with Oak wood for 4 hours, then wrapped in peach paper and cooked for another 4-6 hours till the internal temp reaches anywhere from 195° to 205°, and then the meat needs to rest for at least 2 hours before slicing. Like I said, it demands time.
