Branding season means feeding hungry crowds. Hooking you up with some recipes!

"Cattle Drive Casserole

Ingredients:

1 ½ pounds ground beef
1 onion, minced
1 taco seasoning packet
½ cup sour cream
½ cup mayonnaise
½ cup shredded cheddar cheese, divided
½ cup shredded pepper jack cheese, divided
One 4-ounce can diced green chilies, drained
2 cups Bisquick
1 cup water
Instructions:

Preheat the oven to 350°F (175°C).
Heat a nonstick skillet over medium-high heat. Add the ground beef and taco seasoning. Cook until browned on all sides.
Add minced onion and diced green chilies to the skillet. Cook until the onion is tender and slightly browned, about 5 minutes.
In a bowl, combine the sour cream, mayonnaise, and half of each of the shredded cheddar cheese and shredded pepper jack cheese. Mix well and set aside.
In another bowl, combine the Bisquick and water. Stir until a soft dough forms.
Spread the Bisquick dough into a greased 9-by-13-inch casserole dish.
Top the Bisquick dough with the cooked ground beef mixture.
Spread the sour cream mixture over the beef layer.
Sprinkle the remaining shredded cheddar cheese and shredded pepper jack cheese on top.
Bake in the preheated oven for 30 minutes, or until bubbly and browned on top.
Once done, remove from the oven and let it cool slightly before serving.
Enjoy your Cattle Drive Casserole!"

We've come a long way, baby!!

Charles Goodnight was a Texas rancher and invented the idea of the chuck-wagon in 1866. Chuck was cowboy slang for food, so naturally, along came the chuck wagon . It was an essential part of any cattle/horse drive, the drovers were much like loggers when it came to food, hot and plenty of it..........although on the move grub was sometimes fairly boring. Meat, sourdough bread, dried fruit, coffee, beans, boiled potato, gravy, stewed fruit, rice and raisins.

Occasionally the cook made time to make fruit pies or a cake with dried fruit. Northern drives mostly got beef with their meals, but the southern drives got salt pork, beans and sourdough. Besides being the chief cook and bottle washer, "Cookie" was also the drives doctor, using coal oil for lice, prickly pear poultice for wounds, and Bachelor Buttons (blue flower) for diarrhea. The cook was the 2nd most important position on a drive.
