Last weekend, our F&B and Culinary teams hosted a pop-event for Nolan School faculty to get a taste of what is to come this April during the HEC 98 Conference! Students from both teams worked together to set up the event to test their service, design, and menu. It was a major event for both students and faculty to prepare for an exciting HEC 98 this spring!
“Pop-Up is a fantastic opportunity for all our culinary managers to gain experience working a real service. There’s so much more than just cooking that goes into an HEC event for our Culinary team, whether it’s practicing teamwork, preventing allergen contamination, or finding ways to reduce food waste through cross-utilization. We all want to provide the best experience possible for our guests, but events like these help us to define what that really means: in quality, in safety, and in sustainability.” – Adam Hollingworth, Executive Chef for HEC 98
“It was a really beneficial weekend for trial and error, to get valuable feedback, and to learn from my mistakes” - Caroline Lauer, Culinary Manager HEC 98
Due to a generous donation from Lavazza, we will be able to offer the best coffee service in our 98-year history! Lavazza is an Italian coffee company, dedicated to the art and science of coffee creation. Lavazza includes sustainability and equity in its core mission, which is why we are so thankful for their generous donation of a professional-grade coffee cart, coffee, and barista training for our beverage team.
“I loved the Lavazza training, and I learned how to pull a perfect shot of espresso as well as the mark of a good crema. I am looking forward to spending more time practicing my latte art and to serve outstanding cups of coffee to HEC guests!” - Joy Xu, Food & Beverage Service Assistant Director
“My team and I are excited to showcase Lavazza and the work that they are doing globally to work towards a more sustainable and equitable coffee industry. There is a lot of work that needs to get done in this industry, and we are immensely grateful to be working with a company that is actively improving global coffee practices.” - Jessica Molitor, HEC 98 Beverage Director
We would like to extend our gratitude to Frank LaRusso and Kathleen McCarthy, who are incredible Barista instructors for Lavazza and made this experience possible.

Neil Tarallo is a Senior Lecturer at the Nolan School of Hotel Administration focusing on innovation and entrepreneurship. In addition to teaching, he works with companies and executives directly to improve their innovation strategies. Lecturer Tarallo’s commitment to entrepreneurship, innovation, and new modes of thinking reflects the mission of HEC 98, as we aim to bring the hospitality industry together to boldly solve our greatest challenges.
He grew up in a family of entrepreneurs and was immersed in a creative environment from an early age. From his grandparents to his parents, Lecturer Tarallo’s family-owned businesses, which helped foster his attitude towards life: “I can accomplish whatever I can set out to do.”
When looking back at his successful and dynamic career, one of the key aspects that stand out is his experience in teaching internationally. In every country he visits, he tries to immerse himself in the culture as much as possible, ranging from what types of food he eats to the clothing he wears. Through these experiences, Lecturer Tarallo is able to understand and learn more about how innovation and entrepreneurship play a key role in shaping and improving entire cultures and the lives of individuals. Thus, Lecturer Tarallo brings these takeaways into his classroom, helping his students to learn more about how other parts of the world operate.
Despite his busy schedule and active involvement, both on campus and in the Ithaca community, Lecturer Tarallo finds joy in teaching students. He believes that his passion for teaching has made his work so enjoyable “but work became fun because of the colleagues I work with and students I engage with”. Lecturer Tarallo enjoys having insightful discussions in class where he works to create shared learning experiences, “I think I learn as much from my students as they do from me”. Lecturer Tarallo is excited for this year’s HEC and looks forward to seeing how students can create a more sustainable conference while creating value for the community.

Hotel Ezra Cornell Presents: Better Businesses for Better Jobs
Entrepreneurs hold a tremendous amount of power and responsibility in building businesses that offer better and sustainable jobs in the service economy. This holds true in restaurants and bakeries where margins are razor thing and competition is fierce.
This fireside chat with Professor Tashlin Lakhani will be a lively conversation about strategies in business that support the creation of better career opportunities for workers in the food industry. Jessamyn will share business insight, drawing on Danny Meyer’s ‘Virtuous Cycle of Hospitality,’ a model that hold employees as the primary stakeholder and leads to more effective and profitable business growth. The conversation will focus on how building operational models can allow for better pay, less turn-over, more ability to invest in training, and ultimately, better hospitality to our guests.
Come learn about how building operational efficiency allows for better pay and more fulfilling work for food industry workers, the importance of training and coaching to decrease turn-over and improve guest experience and the impact of the service profit chain in service operations. Additionally, see how companies can build cultures that treat the workforce as the most valuable asset and the importance of an inclusive and diverse workplace.
Join us on April 23rd at 1:00 - 2:00PM at Statler Auditorium.
Today we are celebrating Dr. Tashlin Lakhani! She is an Assistant Professor in the Nolan School and will be moderating “Better Businesses for Better Jobs” with speaker Jessamyn Rodriguez on Saturday, April 23 at 1:00-2:00PM
Dr. Tashlin Lakhani is an Assistant Professor of Management and Organizations at the Nolan School of Hotel Administration in the SC Johnson College of Business at Cornell University. She is a Cornell alumna, receiving both her Masters and Ph. D. from the ILR School . She currently teaches courses related to Human Resource Management and Franchising in the hospitality industry. She hopes students who take her courses challenge their assumptions and be able to apply the industry-specific strategies they learn to their own organizations.
In addition to her roles as a professor, her passion for her field has led her to engage in research that investigates the determinants of employment practices and job quality: specifically, how human resource management differs across franchisee-owned, company-owned, and independently- owned operations in the hotel and restaurant industries. Her research has fueled her to make new insights into the field and to find connections between her academic research and practice.
Following this year's HEC theme, Professor Lakhani is celebrating the importance of having and spending time with family and friends post-pandemic. She is also celebrating Cornell students who have persevered through the pandemic and have discovered innovative ways to overcome the obstacles they encounter. Finally, she is celebrating her opportunity to come back to Cornell in-person and get to experience face-to-face interactions with students and faculty.
Hotel Ezra Cornell Presents: Champagne Campaign
Master Sommelier Jack Mason will lead a tasting of four distinctive styles of Champagne to highlight how this delicious, sparkling wine is much more than an applauded apéritif. Although no other beverage elicits thoughts of celebration and fun more than a glass of Champagne, Jack will emphasize how the leader of the bubbly category should be viewed as a "wine" and the diversity of profiles that exist.
Join us on April 22nd at 11:00 - 12:00PM at Statler Auditorium. Open to registered attendees only.
There are 3 hours left before giving day ends and there are $700 before we reach our goal! There is still time to support HEC!
