Goodness, what an adventure this was! Let me just say.....that when I got to Oklahoma City, the STOCKYARDS, and my destination for the weekend...I decided right then, that Hico Texas was maybe the furtherest north I ever was to drive! Plus, if I ever do...again, well, I did tell them I would come back next year, BUT, I will leave a day earlier and drive however far east or west I have to in order to stay off of I-35!!!
I was captured on camera, in route by a dear friend, along about Texas Motor Speedway!
Ok, I was greeted by my dear friend Bill Shipley and Jeanne, and some of the groundmens who were there to assist us. Oh, and John Byrum, "Have Wagon Will Travel!". I got unloaded, 95% setup. We went out to supper and off to the room! I set my alarm for 4:30am and shut my eyes....next time they opened...OH MY GAWD. 7:45!!! I forgot to save the alarm and my day kinda started out behind!
I was a solo camp this trip! So I needed those extra early hours all day long!
I was late with coffee, that was sent to Oklahoma so I could use... Ranch House Coffee and I was so excited, and yes it is very good! So said the folks when I finally served some!
Then, prep began, and I just didn't have time to take but a few pictures!
They gave me pulled pork butts, and I made stew, Alton Paris, I'm sorry but the new spices you sent just didn't fit this recipe.
I decided before I left to make an Apple Cobbler with roasted green chilies! Which I made, roasted the chilies over the fire, diced and added to the Apple filling...I then topped it with sweet Cornbread with lots of Cheddar Cheese! Let me say this, I have a group text list of ladies I've got to send the recipe to! If I can get it on paper! Anyway, over all...I was a great day! Prolly 500 or so folks ate really well off of 5 wagons serving their own creations!
After we all got loaded we said our "see ya down the trail". I made new wagon buddies as always, the best folks!
We were so tired, but off to the Cattlemans Restaurant we went. We get there and check in...1 1/2 hour wait!!! After a bit, Bill text the owner and with a few minutes we were seated! The Cattlemans sponsors the event we cooked for and I met David, that morning when he came down with the supplies, great guy, very humble and just wanted to know if there was anything any of us needed. So, in the immediate moment at the restaurant.. it was nice to know who ya know!
It's time to head home now, but first, I have to rewire my trailer light plug! Seems I Jack knifed turning around and pulled all the wires! So, enjoy the few pictures I did get and have a blessed day! Brother Joe, I'll watch you on line this morning while I'm driving.. way around off I-35!!!
