What is it about food that moves you? What are you inspired by? What do you go out of your way to try? Also, what is your favorite part about trying new things?

Myself, I love hospitality and when a place just loves what they do you can sense it and it shows in the final product. I love when people are happy doing what they love.

What makes for "good" service?
What do you look for when you go out? What is your definition? How do you handle poor service? I'm curious to know..
There are no wrong answers.

To me, I think attentiveness is the main win!
No matter what happens if you as a server are aware of what's going on at your tables at all times and addressing every situation with your guests individually you are a natural born server.
I tip so well in those instances!

What are your thoughts?

I always look forward to my sister's broccoli dish, and on Christmas we have always opened our presents on Christmas Eve and stockings on Christmas day.

What's your favorite summer time food?
I admit, I'm a patio and margarita with chips kinda guy. Although, I find I enjoy many summertime foods I think my favorite is a good cold cut sandwich.

That being said, I implore you to try a new sandwich this year! I find it can be the chefs best work because of the love put into the craft! Trust me...

Mother's day is around the corner my friends, if you're planning on preparing a meal this Sunday my advice is:
Sharpen your knives, even if you think they're fine, sharpen them. Sharpen even your pairing knives, don't neglect them.

One of my kitchen philosophies is: if you take care of your knife your knife will take care of you. On that note, always hand wash your knives right after use and promptly put them away. Trust me! This is a wonderful practice!

Hot tip of the week:

When cutting onions, place your cutting board close to the sink and run some warm water to prevent crying. The reason this usually happens is because of the acid spores being released from the onion act as a defense mechanism. So, therefore they automatically stick to the wettest thing around which is usually your eyes.

I hope everyone had an enjoyable day yesterday whether you celebrate valentine's or not. I personally really enjoy it but had a client book me so I had to deliver an experience that was like no other. I got my girlfriend some roses and we're having a date night on Friday. This was my first Valentine's day booking and they said it was perfect! That's about the highest praise I could ask for.

I love an over easy egg, I think it just gives a breakfast sandwich it's full potential.. along with a good bread of course!
But I'll take a cold cut all day every day, preferably with some medium rare roast beef! 🤤

Pro tip of the week!
Re-purpose...
Grocery bills are getting expensive these days, so use what you can as many ways as possible.
Example:
We all had a fantastic Thanksgiving Turkey dinner, the fam and I also had a ham. So we boiled the turkey carcass with any bones we could pull from the meat and simmered it in salt water for several hours with a miripoix (celery, onion, carrot) then I strained it and poured it into reusable quart containers. After it chilled, I skimmed the fat off the top and now I'm ready to make some soup. Or perhaps a lovely velouté or bechamel sauce.
Anyways, try roasting a chicken and instead of having chicken for dinner, try pulling the meat and making some chicken salad instead...
Just an idea to get ya thinking!

Hot tip of the day!
Remember that the microwave is still a very useful tool. Don't let the stigma of it ruin your meal, you can make plenty of things in advance and use it to rapidly heat products for service from 1 to 20. Of course, most people don't want to rely on it but especially when it comes to making food for just yourself it's ok to spend a lil time on prep and reward yourself with a bit of reheating.
