Realities of FDA’s “Closer to Zero” Heavy Metals Strategy
The FDA has long known of heavy metals, notably lead, cadmium, arsenic and mercury, in foods such as those made for infants and young children. The agency revealed its first draft guidance titled “Closer to Zero” in January 2023. FDA’s “Closer to Zero” heavy metals strategy begins with action levels for lead in infant foods.

Baby food samples and those made for young children (n=686) were collected and tested from 2014 to 2020. “All food categories had mean lead concentrations below 10ppb except for root vegetables, which had a mean concentration of 11.6ppb,” as reported in the Food Business News article “FDA Draft Guidance Establishes Lead Levels for Baby Food” [https://lnkd.in/dufsv7KK].

So, how do the results from 686 samples tested for lead compare to FDA’s “Closer to Zero” draft guidance? The proposed limits are:

*10 ppb for fruits, vegetables (excluding single-ingredient root vegetables); mixtures (including grain and meat-based mixtures); yogurts; custards/puddings and single-ingredient meats.
*20ppb for root vegetables (single ingredient)
*20 ppb for dry cereals.

The guideines seem reasonable, yet 13 industry groups, including the American Bakers Association and the North American Millers’ Association, question how these action levels were established, according to the Food Business News article “FDA Lead Proposal Lacking Details, Industry Groups Say,” [https://lnkd.in/d9H2-qcp].

These industry groups expressed concern about whether the small sample sizes used sufficiently account for the variability of lead in different growing regions. Also of concern are challenges in the supply chain and growing region limitations (i.e., certain crops must be grown in certain climates and can’t simply be moved elsewhere if lead levels are higher in one region than another).

The FDA estimates its proposed "Closer to Zero" Heavy Metals strategy can potentially reduce lead exposure in food for babies and young children by as much as 24%-27%. Only time will tell.

Altering Taste Perception
It’s commonly understood that humans perceive five basic tastes: sweet, sour, salty, bitter and umami. However, sensory scientists now believe that more fundamental tastes exist. Scientists are learning how to alter taste perception as researchers continue to delve into the mechanisms of taste bud receptors, such as how the chemical structure of various compounds impacts taste perception and how certain compounds can be used as taste blockers to improve consumer perception of a product.

One study found how a low salt concentration can deliver a sweet taste. In an article titled “How Salt Can Taste Sweet: The Myriad Mechanisms of Taste Perception,” published in eLife, Feb 28, 2023 (https://lnkd.in/dQRixk5G), the author—Prof. Atsuko Yamash*ta mentioned that the sodium ion (Na+) in table salt (NaCl) primarily drives salt taste perception. But the anion (chloride ion Cl-) also contributes to taste perception via “unique molecular mechanisms.”

“Scientific studies have proposed the presence of multiple salt detection pathways in the taste buds, but their exact mechanism is not fully understood,” said Yamash*ta. To better understand taste perception, note that different concentrations of salt yield different tastes. Humans perceive a salt taste at 100mM of salt, but concentrations >500mM can yield bitter and/or sour tastes, while concentrations

While Clean Label has gone beyond mere ingredient statement labeling and nutritional claims to include minimal processing, sustainability and other process-related factors, label transparency remains at the top of the list. “People in recent years, are giving more preference to products that provide more information on the product packaging,” stated in its summation of the jerky snacks Market for 2023-2033.
