A very late post but the positive vibes still have me pumped up more than a covered claim! H-Que was on the move last week serving up some insurance colleagues. And let me tell you, they insuRAN up for seconds (sorry, that’s a stretch). From 🐮Brisket Tacos to 🇵🇱Polish Sausage Bites to Dogs to Bacon Beans ➡️ the menu was COVERED….no exclusions 😎

Bar-R-Que was in the gym this weekend tryin the “foil boat” method and made some brisket tacos topped with chimichurri, 🍍pineapple and 🔥 🌶️ salsa. And boy did they hurry for that ‘churri!!! No full wrap. No butcher paper. No spray. Just some salt/pepper/garlic, VERY little trimming and set on the smoker riding at around 210 degrees over pecan. The boat allows the brisket to tenderize a bit more, collect that juice while forming a rendered AND crispy fat cap.

I’ll do this method again. A tweak here and a tweak there. Lessons learned. That’s what great BBQ is all about!!! Write that down.
