Chef Lonnie has always had a passion for cooking. Take an all-American guy from Central Florida, give him some French culinary training and an appreciation for Asian, Caribbean and European cuisines and it’s no surprise that his favorite foods infuse flavors from other cultures into American cuisine.
When Chef Lonnie and wife Christina decided to open their own restaurant, “fusion” was what was on their palates and on their minds — not simply a slavish mimicry of other cuisines, but a freestyle mash-up that requires creativity, guts and great ingredients.
Every day Lonnie makes a pilgrimage to the local seafood market to find the freshest, most flavorful fish and meats, often filleting the fish himself. That inspires the day’s specials and informs what’s on the menu: snapper dressed with Thai chili sauce, blackened grouper, boutique ribeye steak, vegetarian eggplant parmigiana, pork bulgogi.
Lonnie carries a curated selection of excellent, well-priced wines and a rotating selection of craft beers.
