We were honored to cater a wedding reception outside of Vernonia, at Camp Wilkerson yesterday. Appetizers were Sundried Tomato & Spinach Pinwheels, with an Herbed Cream Cheese Spread, Smoked Salmon on Cucumber Rounds with Cream Cheese, Dill, Lemon & Chives. The dinner buffet featured Marry Me Chicken, Beef Bourguignon, Rotini, a Fruit Display, Watermelon,and Mixed Greens Salad. Guests loved the food!

Marry Me Chicken, is a delicious chicken entrée with boneless, skinless, thighs, seared, and served with a creamy Parmesan, sundried tomato, garlic, basil, spinach sauce. Penne goes great with this.

We catered a Memorial yesterday, outside of Vernonia for a lovely family. Beautiful place, and the guests were awesome! On the menu: Huli Huli Chicken, BBQ Pork Country Style Boneless Ribs, Baked Beans, Mac-n-Cheese, Coleslaw, a Fruit Display, Herbed Cream Cheese Spread on Crostini with Sundried Tomatoes, and Chocolate and White Cupcakes. It was so busy, I wasn't able to get many food pictures. My grandson worked with us for the first time. Very special day!

Catered the annual business meeting for the Upper Nehalem Watershed Council last night, at the Grange, here in Vernonia. Guests enjoyed a Fruit Platter, Crudites with Hummus and Tzatziki, Caprese Skewers, and Herbed Cream Cheese Spread on Crackers with Sundried Tomato Garnish.

I prepared a family style dinner tonight for 8 guests, celebrating Shabbat. The appetizer was an Olive Tapenade with Crostini. Dinner was Roast Leg of Lamb with Rosemary and a Red Wine Sauce, Cauliflower & Broccoli AuGratin, Roasted Carrots & Red Potatoes, and a Wintergreen Salad. Crepes with a Triple Berry Sauce and Whipped Cream was dessert.
