Stared my long weekend off right with brunch from my favorite food truck They pop up a couple times a month and I do my best to take the quick drive over the bridge anytime they are there. I love everything Sara & Keith cook up but Keith’s amazing omelets are my go to meal.
Today the Farm Fresh Veggie Omelet was stuffed with fontina cheese, fresh spinach, mushrooms and roasted pearl onions. I’ve never eaten Pearl onions in an omelet and after today it won’t be my last. They were so yummy.
My guy always goes for the Signature Bacon, Egg and Cheese on a challah bun from It might sound simple but let me tell you, this sandwich is something special.
Today, I tried Buffalo Chicken Empanadas with poblano ranch for the first time. They had a crispy crust with buffalo chicken filling that had the perfect level of heat. I loved the creamy poblano ranch paired with the empanadas.
My son’s favorite are the Papas Bravas Homefries with Sunny-side Up Eggs. Those homefries are honestly some of the best potatoes I’ve ever eaten. They are topped with paprika aioli that I could eat on everything! Maybe one day they will put it in a jar and sell it🤞🏻 I’d be the first in line.
