Red cake

INGREDIENTS

125g butter
1 cup sugar
3 eggs
3 teaspoon baking powder
1 teaspoon vanilla essence
2 cups flour
1 cup milk
desiccated coconut

METHOD
Beat the first 3 ingredients together until light & fluffy.
Add in vanilla essence , flour & milk , mix well .
Grease cup cake pan & add enough batter in each pocket.
Pre-heat oven to 180 degrees.
Bake for 15-20 minutes or until done .

Syrup :

1 cup water
1 cup apricot jam
red food colouring

Syrup :
Boil together the water and jam in a saucepan on medium heat ,
then add red food colouring ( add as much as u want ).
Set aside to cool.

Once the syrup is cooled and cakes are baked dip each cup cake in syrup and roll in coconut , ready to eat

Ingredients

3¾ to 4 cups self raising flour
¾ cup oil
¾ cup sugar
2 eggs
2 cups buttermilk
1 tsp ground cardamom (elachi) optional
1 to 2 tsp vanilla essence

1½l oil for frying
Fine desiccated coconut

Whisk sugar and eggs together. Add oil and Vanilla essence and continue to Whisk. Add half of the flour, cardamom and half of the buttermilk and mix. Add the balance of the flour and buttermilk and mix until well incorporated.

You should have a nice thick batter. If batter is to thin, you won't be able to get the desired shape and you should add the extra flour until it becomes a thick cake like batter. If batter to thick add more buttermilk. Allow to rest for 30 minutes. It should be a nice cake batter consistency.

Heat 1l oil in deep pot.
Oil should not be to hot.

Drop doughnut in oil by using a Ice-cream scoop or tablespoon. Slide batter off tablespoon using your finger in hot oil. Don't worry if they not entirely round, tails and horns are fine 😂

Cook on Meduim heat. Cook until golden. Do a toothpick test to see if it is cooked inside.
Remove on paper towel to remove excess oil.

Syrup
1½ cup sugar
1 cup water
3 cardamom pods

Bring to a boil and cook for 5 minutes
Remove from heat. Dip bollas in syrup for only a few seconds until evenly covered. Sprinkle with coconut 🥥

Notes: The success of your bollas is based on your batter consistency. If it's a weak batter it will lose it's shape when you drop it in the oil and look like a flat pancake 😂 Just adjust your batter by adding additional flour.
The reason I don't add all the flour together as the batter becomes unmanageable to work with.

Simple Jam Filled Donuts Recipe

Ingredients:

4 to 4 1/2 cups flour plus more for dusting

1/2 tsp salt

2 1/2 teaspoons dry active yeast

1 cup warm milk

2 tbsp sugar

2 eggs large

2 tbsp unsalted butter melted and cooled

strawberry jam or jam of choice

vegetable oil for frying

icing sugar for dusting

Instructions:

Prepare the dough

Mix the yeast with 2 tablespoons of the milk and 2 tablespoons sugar and let sit until foamy, about 5 to 10 minutes then add to the flour with the remaining milk.

In a mixing bowl combine 4 cups flour and salt then add the yeast.

Add the eggs and butter to the flour mixture.

Begin to mix the ingredients into a soft, but not sticky, dough. Add a little extra milk if needed, 1 tablespoon at a time or work in extra flour if needed, 1 tablespoon at a time.

Turn the dough out onto a lightly floured surface and knead until smooth and elastic.

Allow the dough to rise

Transfer the dough to a lightly oiled bowl, cover, and let rise until doubled in size, about 2 hours.

Punch down the risen dough then turn out onto a lightly floured surface and knead for a few seconds.

Lightly flour a rolling pin then gradually roll out the dough to about 1/2″ thick. Cut out into 3 to 4-inch rounds with a lightly floured cookie cutter. Re-roll the scraps to make more rounds.

Place the doughnuts on lightly floured baking sheets, spacing them apart so they don’t touch when rising, and cover lightly with a dry towel. Let rise in a warm spot until doubled in size, about 20 minutes.

Fry the donuts

Fill a fryer 3-inches high with vegetable oil and heat at about 350 F. Fry the doughnuts, a few at a time, until golden and puffed, turning frequently, about 5 minutes.

Lift the doughnuts from the oil and place on a plate lined with a paper towel.

Fill donuts with jam

Let cool slightly and fill a pastry bag, fitted with a 1/2″ round tip, with jam.

Dust with icing sugar and serve.

South African Hertzoggies



Ingredients
*For the pastry:*
2 cups of self-raising flour
1 teaspoon of baking powder
150gm castor sugar
A pinch of salt
pinch of nutmeg
½ cup of cubed butter
3 egg yolks
1 tablespoon cold water
*For the filling:*
3 large egg whites
1 cup of castor sugar
½ tsp of vanilla essence
2 cups of desiccated coconut
½ cup apricot jam

Instructions
Preheat oven to 180 °C.
Grease a mini muffin baking tray.
Sift the flour, baking powder, nutmeg and salt into a large mixing bowl

Add the castor sugar and cubed butter, massaging the butter in to the flour mix until it forms fine crumbs.

Add eggs and mix, adding a touch of water if needed, to bring the dough together.

Knead the dough on a clean floured surface until smooth, then roll in a ball and cover in a bowl to rest for about 20 minutes.

In a separate bowl, whisk the egg whites to soft peak stage, then incorporating the vanilla essence and sugar in stages until it reaches glossy firm peaks.

Carefully fold in the coconut and set aside.
Press pastry mix directly into each of the muffin trays so that each tray is filled with a 5mm thick base

Add two teaspoons of jam onto the pastry, then top each with the meringue mixture.

Pop the tarts into the oven and bake for 25 minutes until the tops are crisp and golden.
Allow to cool slightly, then carefully lift them out the tray and onto a cooling rack.

Melting Moments



Ingredients
Cookie Ingredients
250g Stork Baking Margarine
1 tsp baking powder
½ cup icing sugar
225g cake flour
1 tsp vanilla
75g cornflour

Icing Ingredients
80g Stork Baking Margarine
110g icing sugar
1 tsp grated lemon rind
1 tsp lemon juice

Step by step method
Preheat oven to 160ºC.
Beat Stork Bake, vanilla, baking powder and icing sugar in a small bowl with an electric be**er until light and fluffy.

Stir in the flours in two batches, mix well.
With lightly floured hands, roll into walnut sized balls and place about 3cm apart on a greased baking tray.

Flatten slightly with a floured fork. Dip the fork into flour before each use.
Bake for about 15 minutes or until biscuits are a pale straw colour.

Cool in pan before putting on cake cooler.
Beat all the ingredients together.
Sandwich two biscuits together.
When all are iced together, dust lightly with some sifted icing sugar.

Store in an airtight container.They will keep for up to 10 days.

❤️Baked Chicken Empanadas💟
For the Filling:
1 /2 kilo ground Chicken
1 small carrot finely chopped
1/2 cup green peas
1/4 cup raisins
2 small potatoes diced
1 small onion finely chopped
3 cloves garlic minced
1 tbsp soy sauce
salt and pepper to taste

For dough:
2 cups all purpose flour
1 stick cold butter (1/2 cup), slice in cubes
1 tsp white vinegar
1 raw egg
1/4 cup ice water
1/2 tsp salt

For egg wash:
1 fresh egg beaten
1 tbsp. fresh milk

For dough:
In a mixing bowl, combine flour and salt. Add butter and mix using fork or finger tips until pea size like. In a separate bowl, whisk vinegar, egg, and cold water. Pour into the flour mixture little by little and mix together using your hands until the mixture turns dough like. Make into a circular shape and cover with plastic wrapper. Allow to sit in the fridge for 1 hour. Make a golf ball size shape and flatten by using the palm of your hand. Using a rolling pin, roll each ball until it’s about 1/8 inch thick. Use a wide-mouth bowl as a pattern for a nice round shape about 4 inch diameter. Cut off the extra edges using a pizza cuter or knife. Set aside.

For filling: Heat cooking oil in pan. Saute onion and garlic. Add ground chicken and saute until golden brown. Place in chopped carrots and potatoes. Stir and allow to cook for 10 minutes.

After 10 minutes, add the green peas, raisins, and potatoes. Season with soy sauce, pepper and salt. Stir and simmer, until the vegetables, are cooked. Allow to cool and set aside.

Preparation: Scoop up a spoonful of the filling and place in it into the center of the dough. Fold it edge to the edge and seal the edges by using a fork or by twisting the edges. Place them on a baking tray with a baking sheet and brush the inside circle with an egg wash (a simple combination of egg and milk). Bake in a preheated oven at 375 degrees F or 175 deg. Celsius for at least 20 -25 minutes or until crust is light brown.

Note: Alternatively, deep fry until both side are brown. Drain excess oil and serve. Enjoy!

Ingredients :
2 large banana
2 large eggs
100g soften or melted butter
150g sugar
1 tsp vanilla
200g whipping cream
185g cake flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
50g ground Almond (optional)

Creamcheese frosting ingredients:
120g Butter 🧈
125g powder sugar
250g Creamcheese
1 tsp vanilla
1/2 tbsp lemon juice

Procedure:
Preheat oven 170 degree Celsius. Prepare All Ingredients.
In a Mixing Bowl mash banana. Add eggs, butter Sugar vanilla.Mix very well. Add whipping cream and whisk well until well combine.
Sift together flour, baking powder, baking soda , salt. Add to Banana mixture. Whisk to combine until smooth. Add Almond (optional) skip it if you don’t have ground almonds.
Brush baking pan with butter or oil. Pour Brownies batter into baking pan. Bake 25-30 minutes. Cool completely!

Making Creamcheese frosting: Beat Butter 🧈 and powder sugar until smooth. Add cream cheese, vanilla and lemon juice. Whisk 1 minute.
- Spread Creamcheese to brownies. Refrigerate atleast 30 minutes before serving.
Serve with your favorite drinks!

Baking time : 30 minutes (175degree Celcius)

Hertzog Cookies (Coconut & Jam cookies)

You will need:
2 cups Self Raising Flour
Pinch of salt
150 g Butter or Margarine
3 Tbsp Sugar
3 extra-large eggs, separated 
3 Tbsp water 
I/2 cup Smooth apricot jam
1/2 cup Sugar 
2 cups desiccated coconut 
What to do: 
1. Preheat the oven at 180°C. 
2. In a medium bowl, sift flour and salt together. Add the butter or margarine to the flour and rub with fingertips until the mixture resembles fine breadcrumbs. Add the sugar and mix well. 
3. Combine egg yolk with the water and whisk. Add to the flour mixture, and knead lightly to a firm dough. 
4. Place the dough on a floured surface and roll out to a thickness of about 3 mm and cut into rounds with a cookie cutter. 
5. Line a greased patty tin or muffin tin with the rounds of dough and spoon 10 ml of apricot jam into each and put aside. 
6. Beat the egg white until soft peak stage gradually add the sugar and beat until stiff peak stage. Gently fold in the coconut. Spoon in 1 Tbsp of the mixture on top of the jam and make sure it covers the jam completely.
7. Bake in a preheated oven for 20-25 minutes or until golden.
