I love a week night one-pan wonder! So I have stuffed under the skin (using a teaspoon to gentle separate skin and meat to create a pocket) with yoghurt and cream cheese mixed with lemon zest, sage, garlic and smoked paprika. Popped on some olive oil, s & p then will bake (180°c) for 50 min. Take out chicken to rest (under foil to keep warm) while the veggies bake for another 10-15 min. I have some rocket in the fridge for a green. Easy and low mess!
