To kick start our Savour weekend of food & wine, we have organised a special treat. Our cocktail evening featuring Collie Colombine from The Fine Zest & Sebastian from Wildbrumby Distillery will celebrated the tastes of the mountains.

Enjoy roving canapés featuring local produce, demonstrations by Collie on tricks to making the perfect cocktail including one featuring Wildbrumby Distillery who will be showcasing their award-winning products on the evening along with entertainment by popular Jindabyne singing group, Cool Change.

Meet Columbine Courouble - The Fine Zest
“The Fine Zest” was created in 2021 by Columbine Courouble, experienced mixologist. Collie has spent many years working behind the bar at a historic 5 star hotel in Canberra, before joining the local forces with Underground Spirits, gin & vodka distillery, as a brand ambassador. Her passion for sharing the knowledge behind mixology & gin making began there.

Chasing the snow & the mountain life, Collie moved to the Snowy Mountains in June 2021 & has been here ever since, working as an outdoor guide & shaking cocktails. Who said mountain biking & mixology don’t mix?

“The Fine Zest” aims at bringing quality beverages to enhance your event, creating a unique experience, with some tricks like our bubble smoke gun, flaming drinks & wonderful garnishes.

Meet Sebastian Druege - Wildbrumby Distillery
Sebastian Druege is a highly experienced Chef & Pastry Chef, having trained & worked in both Germany and America in fine dining. In 2013, Sebastian joined Wildbrumby Distillery where he is now the Distiller, overseeing production & product development.

His dedication to excellence has been demonstrated through his successful completion of the Wine and Spirit Education Trust (WSET) Level 1 Wine and Level 2 Spirits with distinction. Sebastian is passionate about creating unique & quality products, & is always looking for new ways to expand & develop his craft.

Meet Cool Change
Tracy, Roz, Erin and Sue make up the Jindabyne group, Cool Change. They make music in the mountains. Their gigs are full of love, laughter & of course great music. They do love harmonies.

What makes a drink extra special is the environment and the occasion. This week we went on an overnight trip to Mt Twynam - and despite being very limited in weight I couldn’t help myself but to bring a delicious cocktail to enjoy with a game of Uno in our snow made kitchen overlooking Guthega and the Snowy River. Extra spicy, we chilled it further with a snow shovel made ice cube!

🍌 "El agua de pasión" 🍌
30mL El Jimador tequila
15mL blue curacao
20mL Passoa
1/2 banana
Blend all ingredients with a few ice cubes. Add more ice cubes if you want it thicker - best to start with less ice cubes and add more if needed
Garnish with half a passionfruit floating on top

A refreshing cocktail on a bed of flowers and chocolates, special treat for a special one.

🌹 "The Rosie" 🌹
45mL Belvedere Vodka Cytrus
15mL Aperol
5mL Monin Rose Syrup
30mL ruby red grapefruit juice
2 slices of cucumber, muddled
Garnish: grapefruit peel & edible flower
Start by muddling your cucumber slices, add all ingredients and shake shake shake!
Double strain in chilled martini glass.

Enjoy with your loved one ❤️

The art of mixology doesn't stop at mixing drinks. It's amazing to create tailored cocktails like this one, putting the imagination to the service of a thematic, thinking out of the box and borrowing from other crafts to engineer the garnishes & presentation, thus creating a whole story in a drink!
This cocktail "The love potion" was served on Valentines Day, served by a costumed witch from a cauldron placed on a bed of dry ice. Quite a show! 🧙‍♀️

A twist on my favourite classic: the negroni.
Replacing the Campari or bitter aperitif by the Pampelle ruby red grapefruit aperitif really brings a sweet bitterness which makes it much smoother on the palate. Negroni is one of those drinks which is either loved or hated; over the years I've seen many grimace when tasting the exquisite & harsh bitterness of this classic drink. When running events, I like to offer drinks which will satisfy most palates, and this one ticks both cases, bitter and sweet!

Recipe below ⬇️

Ruby Red Grapefruit Negroni
30ml dry gin
30ml sweet vermouth
30ml Pampelle ruby red grapefruit aperitif
1 dash orange bitters
Stir all ingredients in a mixing glass with ice. Strain over ice cubes or ice sphere in old fashioned glass.
Garnish with a grapefruit peel

"Back to the roots"
This cocktail was elaborated for a family event, mixed with homemade & homegrown products, and based on the ancestor of my favourite spirit: the Jonge Genever, predecessor to the much more well known London Dry Gin. It was a special occasion and I rarely get to go back home in France; I wanted this drink to represent this idea of coming back to the roots of the things I cherish in life: family, fresh food, and of course gin!

Recipe below ⬇️
30mL Bokma Jonge Genever
15mL creme de framboise (homemade raspberry liqueur)
15mL vin de pecher (wine infused with young peach tree leaves from the garden)
8mL lemongrass syrup
30mL Jasmine green tea
Shake with ice and double strain in a chilled wine glass.
Garnish with a raspberry and a slice of peach from the garden.
