A lovely family group attended HBCS as we were able to tick ✔️ all their requirements.
Disabled access
*Accessibility for a wheelchair user
*Older family members who need to sit down
*No onions or any ingredient from the onion family
*No chilli or capsicum ingredients
*Two members gluten free
*Easy travel distance from Bristol
*Bespoke a class’Cooking with Vegetables’

I am humbled and honoured to say that I am a semi-finalist!

My dish is a smoked honey porter & black garlic dark fondant, with a decadent smooth warm liquid chocolaty centre.
Served with charcoal infused caramelised honey ice cream.
bbqd honeycomb to add a smack of sweetness.
Hay smoked raspberries for a floral vanilla zing and freshness.
Cold smoked water ganache made with milk chocolate for some light creaminess and a gentle hint of smoke.

Our second Cookery, Nutrition and Yoga day went down a treat.
The guests were welcomed with a mediation session to calm after the drive 🚗
Followed by a fascinating talk about gut health and how gut health also can affect mental health.
A short break and then we were joined by Kirsty Brooks from little batch talking about the health benefits of a selection of foraged syrups. Our customers made their own wild syrup mocktails.🍸
Making no bake granola followed by Poke bowls.
Everyone went free range and designed their own from an array of ingredients.🥗
Lunch was followed by a talk about blood sugars and how to combat fluctuations.
The day finished with a relaxing yoga session in the garden..
What a wonderful day ❤️
We will be planning more events like this for 2025…

Our apprenticeship, Theo Houghland, smashing out a big batch of feta....or should that be Theta!?
Gorgeously creamy curds, weve made this one using Mitcheldean Milk Shed and Oh-my-goat milks.
Cows milk for the creamy richness and higher fat content, and goats milk for that beautiful sweetness and slight vanilla notes.
The two together yield a fresh, light and so tasty cheese, that ages and deepens in flavour amazingly!

Join us on a Cheese class to learn how to make your own or other classes where you'll get to taste some used in different dishes. For example, we've smoked feta on fire classes, baked it with honey and pistachio on our Greek classes. We even age some for months/years to taste on our fermentation classes!

We were very honoured to have created a proposal and hosted 15 talented Chefs on the Forward with Marcus Wareing culinar...

We were very honoured to have created a proposal and hosted 15 talented Chefs on the Forward with Marcus Wareing culinary apprenticeship programme in partnership with Compass Group UK & Ireland and HIT Training
Our proposal was basics, zero waste, local and cooking on fire!
This included using local produce, trout from Harts Barn, foraged vegetation & flowers from the garden, goat and goats milk.
Day 1 was a whirlwind of fire teaching, trout fishing, eating delicious delights, visits to Court Farm and Oh-my-goat gelato followed by a goat butchery masterclass The Meat Hut in Longhope
Day 2 was a lesson for us in 15 talented chefs working as a team creating a ‘goatcentric’ feast for our local producers feast, an incredible fish filleting instruction from Marcus Wareing
And a huge thankyou to Neil from Greenhill Coffee Roasters Ltd for keeping all the chefs fuelled up!
We will do more posts over the next few days to share with you our incredible two days but firstly we would like to thank our team at the cook school:
Yvette Farrell for hosting, chauffeuring, horticultural input and making sure time schedules were kept
Joe Parke our Chef Manager for all his preparation, fire teaching skills, culinary knowledge and love of local produce
Theo Houghland our Chef Apprentice who worked hard, learnt so much and whose smile beamed from ear to ear
Lianna Parke our Lead Kitchen Assistant for creating a spotless, well equipped environment
And Cobe Niblett kitchen Assistant who washed up and washed up ❤️
