As some of you may know - as well as teaching Italian Cooking Classes I also teach Pilates!

To get us movin' and groovin' during these strange times I've decided to host free LIVE streaming Pilates classes.

Salsa verde and pinzimonio recipe

Salsa Verde orignates in Piemonte (called Bagnet verd in regional dialect). It was used as a condiment for the typical bollito misto platter which was none other than a selection of boiled meats.
Great as side dish for BBQ with pinzimonio vegetables

1 bunch Italian Parsley
1 hard boiled egg (whole)
1 slice of bread of your choice
1 clove of garlic
1 Tbsp capers (optional)
2 Tbsp brown rice or wine vinegar
Salt
1 cup Extra Virgin Olive Oil

For a gluten free variation use 1 small boiled and mashed potato instead of the bread.
Remove crusts from the slice of bread. Place in a cup and soak with vinegar.
Leave for about 5 minutes and then remove excess of vinegar.
Roughly chop boiled egg (do not mash it) together with the soaked bread.
Chop finely the parsley leaves together with capers and the garlic.
Add the chopped egg and soaked bread (karengo fronds) and pour in enough oil to obtain a sauce like consistency (about ½ cup).

Pinzimonio

The Italian custom of "pinzimonio" requires a good assortment of fresh raw organic vegetables and a relaxed atmosphere.
Prepare a big bowl of vegetables, cut into strips: carrots, courgettes (raw), cucumber (pips removed) celery (peeled), capsicums, spring onion, cauliflower (raw), artichokes, ……

New blog is up! It even includes a cheeky Vin Brûlé (mulled wine) recipe. "Adam & Eves breakfast croissants, the espresso at the The Coffee Shack Wanaka, the relaxed lunch at Federal Diner Restaurant, the fresh beer after a rewarding day of skiing at Treble Cone Ski Area… But our favourite experience remains the freshly baked scones paired with a glass of mulled wine at the ‘Wineglass café’ of the Edgewater Resort Wanaka”.
