It is now official. I make the best cheesecakes in SW Washington. Probably Portland too. Order yours today. This one came with a lemon zest whip cream and fresh raspberry compote. It was bomb.

For a limited time, while supplies last this Wednesday 6/12/24 11 - 1/sold out!
We are serving tacos al pastor, seafood ceviche, posole, pupusas with curtido slaw and a variety of fresh made salsa. My amazing team has been hard at work all term figuring out these recipes and we are excited to share them with you. Please come out if in the area and get some grubbing lunch! :)

I’m on an amazing adventure to Alaska with they’re supporting me and other veterans and first responders as our journey continues post service. One of the guys had a birthday on the trip so we ran to the store and I put together a no bake cheesecake with macerated strawberries and scratch whipped cream. It turned out amazing, my new nickname is chef haha.

We were tasked with lamb in barbecue class today. We had to take 3 different cuts and do them up right. I chose to cut up my portion and grind it in our house grinder with some herbs, spices, and panko. I served these grilled koftas with lemon yogurt dressing, a marinated cucumber salad, and grilled pita. A huge thank you to and the amazing Ms. Lucy for taking these awesome photos! I always close my eyes. It’s a whole thing.

My bbq midterm was a lot of fun. It was half a chicken and a couple sides and a sauce as well as a pickled item. I did my life cumin run on the chicken and roasted smoked it low and slow. I served it with smoked loaded potato, garlic butter corn, pickled slaw, and a creamy horseradish and chive sauce. It was pretty bomb.

I made my first fancy cake! was kind enough to let me intern a bit at their bakery this summer while I’m working on my culinary program chef Donna was incredibly kind and patient, this is not something that I am naturally good at. The peanut butter cake with chocolate gnash drizzle with crushed peanuts was a lot of fun to put together.

Today in barbecue class we were tasked with serving pork loin a side and a sauce. I smoked and seared mine after seasoning it with good old S & P. I then served it sliced with a scratch Mac and cheese, honey drizzled cornbread, and a Carolina mustard sauce. Photo credit and garnish suggestions by the irreplaceable dishes were done with great kindness by .im.alex when I was stressing out about my sauce and let them pile up too high. Chef said mine was one of the three with the best cook and flavor, which meant a lot after a hard couple weeks.
