Patty's Melting Pot Representing All Islands In One Pot Francine Francis-Vanheyningen, better known as "Patty" hails from the beautiful islands of St. Thomas U.S.

Virgin Islands and Antigua. Patty developed her passion for cooking from her mother and father-in-law. In 1983, with the help of her children, Patty began cooking for friends and family. The word got out that “This lady can really cook”. In a short time, requests for her dishes came from family, businesses, and friends. Patty’s culinary skills quickly became known across the Hampton Roads area.

Her savory dishes are influenced by the great melting pot flavors of the Caribbean. This includes: Portuguese, Spanish, French, Dutch, French, West African, and East Indian flavors. Her cooking embraces the essence of Caribbean cuisine that is found in the use of fresh foods, island herbs and spices. Some of Patty’s signature Caribbean dishes includes: Curry Chicken, Curry Goat, Jerk Pork, Jerk Chicken, Oxtail, Goat Water, Stew, Chop-up (Spinach, Eggplant, Okra), Fungi, Ducuna, Saltfish (Cod), Stew King Fish, Escovitch Fish, Rice and Peas, Seasoned Rice, Steamed Cabbage Medley, Johnny Cake, Salt Fish Cake, Banana Fritters and Fried Plantains. Patty expanded her services to catering for weddings, festivals, and parties. With the essence of Caribbean herbs and spices, Patty’s food is simply delicious!
