Slow Cooker Beef Stew.
This is a perfect winter meal that can be left alone with confidence.
Ingredients:
1kg stewing beef cut into chunks.
Salt, Pepper and Paprika
1 large onion roughly chopped
4 carrots peeled and cut into chunks
4 garlic cloves, sliced
2 bay leaves
2 tsp dried thyme or 5 sprigs fresh
1Tbs Dijon mustard
2 Tsp tomato paste
4 Tsp Worcestershire Sauce
Glass of red wine.
Warm Beef stock or water.
500g baby potatoes halved or 3 large potatoescut into chunks
1 punnet button mushrooms halved.
2 tsp cornflour (optional to thicken)
Salt and lots of black pepper.
Season meat with salt, pepper and Paprika. Toss to coat evenly.
Brown meat in a large frying pan and once browned place in your slow cooker.
Add onion, carrots and garlic to the same pan, adding oil if necessary.
Saute for a few minutes and add herbs.
Add mustard and tomato paste to the pan and strir through for a couple of minutes.
Pour in red wine and Worcestershire sauce to deglaze the pan. Scrape the pan with a spatula to get all the good stuff off the bottom of the pan.
Check for seasoning and add contents of pan to the slow cooker.
Mix veg and meat and add just enough stock to just cover.
Place potatoes and mushrooms ontop and cover with lid.
Cook on low for ± 8 hours or on high for ± 4 hours.
To thicken mix cornflour with a little cold water to make a paste and add to cooker.
Check seasoning and serve with rice, mash and your green veg of choice.
Lekker winter.
