Biscoff muffins - my favourite flavour of any muffin I’ve ever had in my whole life period.I froze the biscoff spread, then popped it into the muffin mixture which also has white chocolate chips, baked, let it cool down and then added more biscoff spread on top with a biscoff biscuit. Our top tips for a taco bar….Aka a Mexican sandwich or in Mexican Spanish it translates to “light meal” or “wedge” • Have a few meat options - don’t make them too spicy though (just add hot sauce or jalapeños as an option for those that like it hot 🥵) • Fresh homemade salsa, and pickled veg are a must!!!• Cheese and sour cream are not authentic but they taste damn good, make sure you grate the cheese yourself because bought grated cheese is full of preservatives and it just doesn’t taste as good.Adding some lime, salt and lime zest to the sour cream takes it to a 10. • A simple Guacamole is a necessity• Fresh lime and some chopped coriander (some like it some don’t)• I think corn tortillas are the best because they taste authentic! In fact, the Italian word soffritto means “slightly-fried”, and describes the process of cooking these vegetables slowly until they release their flavor.For this reason, soffritto is used to build up a depth of flavor and fragrance! How I ended my night VS how my morning startedI wear many different hats, one of them is teaching yoga in a delicious heated room at Sense of Solis And of course what you all know me for, as a caterer. I love in home dining, last night I spent the evening with a beautiful bunch of people, who were very kind, and loved every mouthful of their dinner *happy dance*. How lucky am I, to be able to serve people in both jobs that I do, filling my cup in different ways. Menu : 5 spice pork belly with chilli caramel sauce. The OG potato bake Lemon and herb roast chicken. Classic caprese salad. Ancient grains with halloumi, spiced chickpeas and a pomegranate dressing.
