Here’s our version of a Sicilian-style braised octopus linguini!

We cooked it for an hour with fresh fennel and white wine and paired it with a salmon and tomato slow-cooked sauce

Meet Chloë! 🙋🏻‍♀️⁠
The other half of our Chef & Chief duo.⁠

She loves to cook but above all there is nothing that she loves more than trying new dishes and tasting wines from all over the world (did you notice? 🍷)⁠

That is where she gets her inspiration for her own recipes and flavour combinations.⁠

Chloë got her cooking degree and aspiring sommelier degrees in 2017, won a televised cooking show and has written her own cookbook in the meanwhile.⁠

Apart from creating food recipes, she loves creating her own cocktails and is very interested in the science of food pairing.⁠

Our meat board is the main dish our guests seem to love the most. It gets picked over and over again so it remains on our menu as a guests' favourite.⁠

Imagine a wide selection of premium cuts from all over the globe, served on our signature large wooden boards in the middle of your dining table. ⁠

A lobster feast is the best feast! 🦞⁠

Here we paired our lobsters with homemade tarragon butter and confit tomatoes. It's part of our Surf & Turf dinner menu ⁠

We love to travel and taste all the world has to offer us. Our very first trip together (during covid season) was to the 'magnificent' coastal area of Boulogne-Sur-Mer where we discovered the local fish market is very authentic and offers loads of crabs, lobsters, shellfish and more.⁠

This creamy cheese from the region of Puglia in Italy, filled with even creamier 'stracciatella' is one of our favourites.⁠⁠

Take this Spring dish of burrata with three kinds of asparagus for example: green grilled asparagus, a salad of young purple asparagus and wild ones to finish the dish!⁠

We love to travel the world to get inspired by the many cultures I come across.

But we always try to make it home for Christmas 🎄

We wouldn’t want to miss the annual family feast filled with joy, laughter and way too much food. Everyone telling stories around the dinner table and raising their glasses to new beginnings.

This year was the mini version of that feast and my love and we took charge of the dinner menu.

Be careful, you'll get hungry 😋

1. Lobster with tarragon butter - tiger prawn ravioli- lemon herb sauce
2. Tuna tartar - smoked halibut mousse
3. Burrata - lavender honey - fleur de sel
4. Oysters - two ways
5. Partridge - jerusalem artichoke - pumpkin purée - forest mushrooms - truffle

Last weeks wedding dinner!
4 starters, Buratta with honey lavender sauce, sea bass with wasabi mayo sauce, Thai satay with home made peanut sauce, gratinated mussels. Main dish was the Meet Meat plank featuring some dry aged Simmental, Uruguayan rib eye, Hereford entrecote and much more. To end with a lemon mascarpone mousse infused with home made limoncello and topped with red fruits. .
