I loved spending time last year travelling round South East Asia and trying different foods. Here a classic from South Korea - Korean fried chicken, with my add ons of pickled cucumber, radish, sesame and coriander.

I was lucky enough this week to take a few days off and travel to France for a few days. On our last day we went to an amazing French market where I bought some lovely ingredients to play around with for work. Try to keep them as simple as possible and let the ingredients speak for itself. There is nothing better than using fresh local ingredients and cooking with them.

White chocolate covered strawberries for a 50th birthday party last weekend. Served on a buffet for dessert. I base a lot of my menus around seasonality and due to this these 🍓 are only available throughout the summer.

Another one of my favourite Spanish dishes, paella. I have used the same flavours but made a risotto instead. I cooked this as a main course for a small dinner party for three people last night.
Brown shrimp risotto, roasted red peppers, bisque, saffron, smoked paprika.

I love playing around with different menu ideas for my clients even when I’m at home. Spanish food is one of my favourites and here I used some of those ingredients to make this. A simple dish I cooked for myself a few months ago. Salmon, Jersey royals, mojo rojo, mojo verde, asparagus.
