These are the easiest flatbreads in the world, they take 10 minutes to make, use only 2 main ingredients (yoghurt and flour), and there’s no need for yeast, proving or kneading. They're soft and fully and can be rolled thick or thin depending in what you're having for dinner. These flatbreads can be eaten brushed with butter and garlic with a curry, topped with tomato and cheese and made into a pizza, rolled thin and used as a wrap for a burrito or homemade kebab, or simple eaten as a starter with olive oil to dip in.

Whats in Season February Edition.
George on some delicious food this February, with mushroom season!
We at Elysia are on a mission to , working with Artisanal producers sourcing their seasonal surplus ingredients to create our delicious canapés, breakfast and lunches! We want to share some tips on how to reduce food waste and cook more seasonally so make sure to check in regularly! *

Vegetables and Ricotta Quiche, Optional Cured Meat
For the filling:
2 bunches of Spring Onions
100g of Butter
7 Eggs (reserve one egg white for the glaze)
1 tsp of salt
450 ml double cream
200g Ricotta (or other surplus cheese, grated)
200g Mushrooms ( Or any other Seasonal Vegetables)

Method:
For the pastry reciepe ( please check out our blog)
Set the oven to 180°C.
Slice the spring onions on the diagonal.
Blanch the mushrooms in a pan of boiling water for 2 minutes, they should still retain a bite. Do the same with any leafy vegetable, roast other vegetables.
Whisk the eggs, egg yolks and cream together in a bowl.
Reserve a good handful of cheese for sprinkling, add the rest of the cheese to the creamy mixture and season well with sea salt and fresh ground black pepper.
Sprinkle half the reserve cheese in a thin layer over the pastry base and scatter.
Over the cheese, place the spring onions. Arrange the asparagus on top, then carefully pour on the creamy mixture to just below the rim of the pastry. Sprinkle with remaining cheese and bake for 30 to 35 minutes, until the filling is set and golden.

🍂 Autumn is here 🍂
New menu alert! Our chef has been busy in the kitchen creating some delicious new recipes made from surplus ingredients! A real crowd please is our Delicious Crostini, topped with red pepper pesto and mixed vegetables.
Want to make it at home? Well here is our recipe, which is 100% Vegan!

Red Pepper Pesto (Vegan) Ingredients:
•6 red peppers
•2 large handfuls of flat leaf parsley
•120g toasted pumpkin seeds
•3 large garlic cloves
•6 tbsp extra virgin olive oil
•Salt to taste
Recipe step by step:
1. Preheat oven to 260C. Cut peppers into quarters, remove seeds and membranes. Place the cut peppers onto a baking tray skin side up in the oven for 15 minutes until the skin is blistered and turns black and inside is soft. Take out the oven and leave to cool.
2. Lower the oven to 170C. Place pumpkin seeds on tray and pop in the oven for 7-10 minutes. During this time roughly chop garlic cloves and roughly chop flatleaf parsley. Once pepper is cooled, peel the black skins off.
3. In a large mixing bowl, add peppers, parsley, pumpkin seeds, garlic cloves, olive oil and 1 tsp salt. Blend with a hand blender or in a food processor. Blend until well combined into a smooth pesto-like texture. Add salt to taste.
4. Place in a sterilized jars and refrigerate.
Will last in the fridge for 7 days or if properly jarred and sealed, can be left at room for up to 2 weeks.
